Ingredients

  • 1 tsp Worcestershire Sauce
  • 2 tbsp ketchup
  • 1 tbsp soy sauce
  • 2 tbsp brown sugar (or white sugar)
  • 1 tbsp olive oil (or vegetable or canola oil)
  • 1 clove garlic, minced
  • 2 tsp apple cider vinegar
  • 4 pork chops or cutlets (around 200-250g / 7-8oz each, including bone)
  • 800g / 1.6 lb baby potatoes (larger ones cut in half)
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Step 1: Preheat your oven to 220°C (430°F) for a standard oven, or 200°C (390°F) if using a fan-forced/convection oven.
  2. Step 2: Toss the baby potatoes in 1 tablespoon of olive oil and season with salt and pepper. Spread them evenly on a baking tray and place in the oven for 15 minutes to start roasting.
  3. Step 3: While the potatoes begin cooking, mix Worcestershire sauce, ketchup, soy sauce, brown sugar, olive oil, garlic, and apple cider vinegar in a small bowl to create the pork rub.
  4. Step 4: Coat the pork chops generously on both sides with the rub, reserving some for basting later.
  5. Step 5: Remove the baking tray from the oven, give the potatoes a toss, then push them to the edges of the tray to make room for the pork chops.
  6. Step 6: Arrange the pork chops in the center of the tray and bake everything together for 15 minutes.
  7. Step 7: After baking, set your oven to broil/grill on high with the shelf positioned about 20cm (8 inches) from the heat source.
  8. Step 8: Flip the pork chops, spoon some of the reserved rub over them, and dab it on the sides as well. Broil for 7 to 10 minutes until the pork is nicely caramelized.
  9. Step 9: Remove the tray and use a brush to gather the golden juices from the tray, then dab the juices onto the pork. Return under the broiler for a couple more minutes to finish.
  10. Step 10: Serve the pork chops with the roasted potatoes, scraping any leftover juices from the tray onto the meat for extra flavor. Garnish with parsley if you like.

Tips & Variations

  • For deeper flavor, marinate the pork chops in the rub for 2 hours or overnight before cooking.
  • Larger potatoes can be cut into quarters to ensure they cook evenly with the baby potatoes.
  • Swap brown sugar for honey or maple syrup for a different sweetness profile.
  • Use fresh herbs like thyme or rosemary on the potatoes for an aromatic touch.

Storage

Store any leftover pork chops and potatoes in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven at 160°C (320°F) to maintain crispness, or warm in a microwave until heated through.
