Rub Mixture

- 800g (1.6 lb) baby potatoes, larger ones cut in half

Instructions
- Preheat Oven: Preheat your oven to 220°C (430°F) for a standard oven, or 200°C (390°F) if using a fan-forced/convection oven.
- Prepare Potatoes: Toss the baby potatoes with 1 tablespoon of olive oil, then sprinkle with salt and pepper. Spread them evenly on a baking tray to roast.
- Start Roasting Potatoes: Place the tray with potatoes in the oven and roast for 15 minutes to give them a head start.
- Prepare the Rub: While potatoes roast, mix Worcestershire sauce, ketchup, soy sauce, brown sugar, olive oil, minced garlic, and apple cider vinegar in a small bowl to make the pork rub.
- Coat Pork Chops: Slather the pork chops on both sides with the prepared rub, reserving some rub to baste later. You can marinate the chops further if desired for enhanced flavor.
- Add Pork to Tray: After the initial 15 minutes, remove the tray from the oven, toss the potatoes, and push them to the edge of the tray. Place the pork chops in the empty space on the tray.
- Bake Pork and Potatoes: Return the tray to the oven and bake for 15 minutes alongside the potatoes.
- Broil for Caramelization: Remove the tray and switch your oven to broil (grill) setting on high, positioning the rack about 20 cm (8 inches) from the heat source. Flip the pork chops, baste with the reserved rub, and apply it to the sides.
- Broil Pork Chops: Broil the pork chops for 7 to 10 minutes until they develop a rich caramelized crust.
- Finish with Juices: Remove the tray, use a brush to gather the golden juices from the tray and dab them onto the pork chops to add extra flavor and color. Return the tray under the broiler for a couple more minutes to finish.
- Serve: Plate the pork chops and roasted potatoes, scraping any remaining pan juices over the pork. Garnish with parsley if desired for a fresh touch.

- You can marinate the pork chops in the rub for 1-2 hours or overnight for deeper flavor.
- If baby potatoes are large, be sure to cut them in half for even cooking.
- The broiling step caramelizes the pork and adds a wonderful color and texture—do not skip this step.
- The recipe uses bone-in pork chops weighing about 200-250g each, but boneless can also be used.
