Instructions

  1. Pre-bake the pie crust: Heat your oven to 400˚F. Line the deep dish pie shell with parchment paper and fill it with dried beans to weight it down. Bake the crust for 12-15 minutes or until it turns golden brown. Carefully remove from the oven and let it cool to room temperature. Reduce the oven temperature to 350˚F. (Note: Avoid poking holes in the crust to prevent egg leakage; using dried beans helps keep the crust from bubbling up.)
  2. Prepare the custard mixture: In a medium bowl, combine the six large eggs with the heavy cream, milk, salt, and ground black pepper. Use a hand mixer or whisk to beat the mixture until fully blended and smooth.
  3. Layer the filling: Roughly chop the fresh spinach. Arrange half of the spinach evenly in the bottom of the pre-baked pie crust. Add half of the cooked and drained breakfast sausage on top of the spinach, followed by half of the shredded cheddar cheese. Repeat the layers with the remaining spinach, sausage, and cheese to build up the filling evenly.
  4. Assemble and bake the quiche: Pour the prepared egg custard mixture evenly over the layered filling in the pie shell.
