Delicious and easy-to-make pizza stuffed mushrooms featuring large portobello caps filled with pizza sauce, salami, onions, olives, and topped with melted mozzarella cheese. Baked to perfection, these are perfect as an appetizer or a tasty snack for pizza lovers.

Mushroom Caps

  • 5 large mushrooms (10cm/4″ wide, portobello or flat mushrooms)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Filling

  • 2/3 cup pizza sauce (store bought recommended)
  • 100g/3.5 oz salami slices, chopped
  • 1/4 red onion, finely chopped
  • 1/3 cup black olive slices
  • Chopped mushroom stems (from 5 large mushrooms)

Topping

  • 1 cup (100g) shredded mozzarella cheese
  • Remaining chopped salami slices
  • Remaining black olive slices

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) to prepare for baking the stuffed mushrooms.
  2. Prepare Mushrooms: Carefully remove the stems from the mushrooms and chop the stems to use as part of the filling.
  3. Drain Mushrooms: Place mushrooms cap side up and use a small, sharp, thin knife to make a small cross cut in each mushroom cap. This helps to drain excess water without splitting the mushrooms.
  4. Oil and Season: Brush the tops of the mushroom caps with olive oil and sprinkle with salt and pepper quickly to ensure it sticks. Flip the mushrooms and lightly dab the inside with remaining oil, seasoning again with salt and pepper.
  5. Fill Mushrooms: Fill each mushroom cap with pizza sauce, and then sprinkle in chopped mushroom stems, finely chopped red onion, half the chopped salami, and half the sliced olives.
  6. First Bake: Place the stuffed mushrooms on a baking tray and bake for 10 minutes in the preheated oven.
  7. Add Toppings: Remove from the oven and top each mushroom with shredded mozzarella cheese, remaining salami, and remaining olives.
  8. Second Bake: Bake the mushrooms for an additional 10 minutes or until the cheese is melted and golden.
  9. Serve: Serve the pizza stuffed mushrooms immediately while hot.
  10. BBQ Option: Preheat BBQ to medium-high heat, then cook the mushrooms covered for 10 minutes (first bake), add cheese and remaining toppings, then cook another 5-8 minutes until cheese melts.

Notes

  • Use large portobello mushrooms or similar wide flat mushrooms to hold the filling well.
  • Cutting a small cross into the mushroom caps helps drain excess liquid and prevents sogginess.
  • If using a BBQ, keep the mushrooms covered and cook carefully to avoid drying out.
  • You can swap salami for other deli meats or make a vegetarian version by omitting the meat and adding extra veggies.
  • Serve immediately for best taste and texture as reheating may make mushrooms watery.
