Ingredients

  • 5 large mushrooms (about 10cm/4″ wide, such as portobello or flat mushrooms)
  • 2 tbsp olive oil

  • 1/3 cup black olive slices
  • 1 cup (100g) mozzarella cheese, shredded

Instructions

  2. Step 2: Carefully remove the stems from the mushrooms and chop the stems finely for the filling.
  3. Step 3: Place the mushroom caps cap-side up. Using a small, sharp, thin knife, cut a small cross on the top of each mushroom to help drain excess water. Be careful not to split the mushrooms.

  5. Step 5: Flip the mushrooms and lightly dab the inside with remaining oil. Sprinkle with salt and pepper.

  7. Step 7: Bake in the preheated oven for 10 minutes (Bake 1).
  8. Step 8: Remove from the oven and top each mushroom with shredded mozzarella, remaining salami, and remaining olives.
  9. Step 9: Return to the oven and bake for another 10 minutes (Bake 2) until the cheese is melted and bubbly. Serve immediately.
  10. Optional BBQ Method: Preheat the BBQ to medium-high heat. Follow the same steps and cook the mushrooms in a closed BBQ for 10 minutes for Bake 1, then 5 to 8 minutes for Bake 2.
