Ingredients

  • 1 1/2 cups long grain white rice (uncooked)
  • 2 cups chicken or vegetable stock (low sodium)
  • 1 1/2 tbsp light soy sauce
  • 1 tbsp Chinese cooking wine (dry sherry, mirin, or sake)
  • 2 garlic cloves, minced
  • 2 cups frozen diced vegetables (carrots, peas, corn mix or fresh vegetables)
  • 1/4 tsp white pepper
  • 1 1/4 cups / 180g bacon or ham, chopped
  • 1 tbsp sesame oil
  • 1/2 cup green onion, finely sliced (about 2–3 stems)

Instructions

  1. Step 1: Preheat your oven to 200°C (390°F) or 180°C fan.
  2. Step 2: In a baking dish approximately 22 x 32 cm (9 x 13 inches), combine the rice, chicken or vegetable stock, soy sauce, cooking wine, minced garlic, frozen vegetables, and white pepper. Stir the mixture well and spread the rice evenly across the dish.
  3. Step 3: Scatter the chopped bacon or ham evenly over the top of the rice mixture.
  4. Step 4: Cover the dish with foil and bake for 40 minutes.
  5. Step 5: Remove the foil and bake uncovered for an additional 15 minutes to allow the bacon to brown and the liquid to absorb. The rice may still seem slightly wet at this point but will finish cooking as it rests.
  6. Step 6: Cover the dish loosely with foil and let it rest for 10 minutes off the heat.
  7. Step 7: Stir in the sliced green onions and sesame oil. Fluff the rice with a fork and serve immediately, enjoying perfectly cooked grains and savory flavors.

Tips & Variations

  • Use fresh vegetables instead of frozen if preferred, just be sure to cut them into small, uniform pieces for even cooking.
  • Substitute bacon with cooked chicken, shrimp, or tofu for a different protein option.
  • Add a beaten egg to the rice mixture before baking for richer texture and flavor.
  • If you don’t have Chinese cooking wine, dry sherry or a splash of sake are great alternatives.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or in a skillet over medium heat with a splash of water to prevent drying out. The rice may firm up once chilled but will soften again when reheated.

FAQs

Can I use brown rice instead of white rice?

Brown rice requires a longer cooking time and more liquid, so this recipe may not work well with it as a “dump and bake.” If using brown rice, consider pre-cooking it partially before baking or adjusting cooking times accordingly.

Is this recipe gluten-free?

This recipe can be gluten-free if you use gluten-free soy sauce and verify that the cooking wine does not contain gluten. Check labels to ensure all ingredients suit your dietary needs.

  • Author: Jack
  • Total Time: 1 hour 5 minutes
  • Yield: 4 servings 1x

Description

This Emergency “Dump ‘n Bake” Fried Rice recipe is a simple and hands-off approach to homemade fried rice, combining uncooked rice, stock, and flavorful ingredients in a baking dish. Baked to perfection, it features tender rice infused with soy and Chinese cooking wine, topped with crispy bacon, and finished with sesame oil and fresh green onions for a delightful meal with minimal effort.

Ingredients

Scale

Baked Fried Rice Base

  • 1 1/2 cups long grain white rice, uncooked
  • 2 cups low sodium chicken or vegetable stock
  • 1 1/2 tbsp light soy sauce
  • 1 tbsp Chinese cooking wine (dry sherry, mirin, or sake)
  • 2 garlic cloves, minced with crusher (straight into pan)
  • 2 cups frozen diced vegetables (carrots, peas, and corn mix)
  • 1/4 tsp white pepper

Topping and Garnish

  • 1 1/4 cups (180g) uncooked chopped bacon or ham
  • 1 tbsp sesame oil
  • 1/2 cup green onion, finely sliced (23 stems)

Instructions

  1. Preheat Oven: Set your oven to 200°C / 390°F (180°C fan) to prepare for baking the rice.
  2. Mix Ingredients: In a baking dish approximately 22 x 32 cm (9 x 13 inches), combine the uncooked rice, chicken or vegetable stock, light soy sauce, Chinese cooking wine, minced garlic, frozen diced vegetables, and white pepper. Stir until all ingredients are evenly distributed. Spread the rice mixture evenly across the dish.
  3. Add Bacon: Evenly scatter the uncooked chopped bacon or ham over the surface of the rice mixture.
  4. Bake Covered: Cover the baking dish tightly with foil to trap steam and bake in the preheated oven for 40 minutes, allowing the rice to cook in the liquid and steam.
  5. Bake Uncovered: Remove the foil and continue baking uncovered for an additional 15 minutes. This step crisps and colors the bacon while the liquid is absorbed and the rice finishes cooking.
  6. Rest: Take the dish out of the oven and cover it loosely with foil. Let it stand for 10 minutes to allow the rice to absorb any remaining moisture and flavors to settle.
  7. Fluff and Serve: Add the finely sliced green onions and drizzle the sesame oil over the rice. Fluff the rice gently with a fork to separate the grains and evenly distribute the flavors. Serve hot and enjoy your perfectly baked fried rice!

  • Use long grain white rice for the best texture; rinsing the rice is optional but not required.
  • Light soy sauce provides saltiness without overpowering; adjust to taste if needed.
  • If you do not have Chinese cooking wine, dry sherry, mirin, or sake are great substitutes.
  • Frozen mixed vegetables add convenience; fresh diced carrots, peas, and corn also work well.
  • Store-bought chopped bacon is convenient, but you can chop regular bacon or use ham as alternatives.
  • The rice may seem wet immediately after baking but will firm up during the resting period.
