  • 600 g (1.2 lb) boneless skinless chicken breasts (4 small pieces)
  • Salt and pepper, to taste
  • 2 tsp olive oil
  • 1 tbsp (15 g) butter

Mushroom Gravy

  • 2 tbsp (30 g) butter, divided
  • 120 g (4 oz) mushrooms, sliced
  • 1 garlic clove, finely chopped or minced
  • 1/4 cup (35 g, approx. 3 tbsp) all-purpose flour
  • 2 cups (500 ml) beef broth (can substitute chicken broth)
  • Fresh thyme or parsley, for garnish

Instructions

  1. Prepare the Chicken: Place a plastic bag or cling wrap over the chicken breasts and gently pound them to an even thickness of about 2cm (4/5 inches). Season both sides generously with salt and pepper.
  2. Cook the Chicken: Heat olive oil and 1 tablespoon of butter in a large skillet over high heat. Add the chicken breasts and cook for 3 minutes until golden brown. Flip and cook the other side for another 3 minutes. Once cooked, transfer the chicken to a plate and cover loosely with foil to keep warm.
  3. Cook the Mushrooms: In the same skillet, add 1 tablespoon of butter. Add the sliced mushrooms and sauté for about 3 minutes until they start to turn golden.
  4. Add Garlic and Extra Butter: Add the remaining tablespoon of butter and garlic to the skillet. Cook for an additional 1 minute until the mushrooms are nicely golden and the garlic is fragrant.
  5. Make the Roux: Reduce the heat to medium. Sprinkle the flour over the mushrooms and stir for 1 minute to cook out the raw flour taste and create a roux.
  6. Add Broth Gradually: Slowly pour in about 1/4 of the beef broth while stirring constantly to avoid lumps. Once incorporated, gradually add the remaining broth, continuing to whisk and mix ensuring a smooth gravy with the mushrooms.
  7. Simmer the Gravy: Allow the gravy to cook for about 2 minutes until it thickens to your desired consistency. Season with salt and pepper to taste. Remember the gravy will thicken further as it cools.
  8. Combine and Serve: Optionally, return the cooked chicken to the skillet and turn to coat in the mushroom gravy. Serve the chicken topped with mushroom gravy and garnish with fresh thyme or parsley. This dish is best paired with mashed potatoes to complement the savory mushroom sauce.
