  • 1/2 Lime, juiced
  • 1 teaspoon Brown Sugar
  • 1/2 teaspoon Crushed Red Pepper Flakes
  • 1/3 cup Water

Instructions

  1. Prepare Soba Noodles: Cook the soba noodles according to package directions, drain, rinse with cold water to stop cooking, and set aside.
  2. Slice Red Bell Pepper: Thinly slice the red bell pepper into strips and set aside.
  3. Chop Cilantro: Roughly chop the cilantro leaves and set aside.
  4. Spiralize Carrots and Cucumber: Use a spiralizer to create noodle-like strands from the carrots and cucumber.
  5. Make Peanut Sauce: In a food processor, add peeled fresh ginger and garlic clove; process until finely minced.
  6. Add Remaining Sauce Ingredients: To the minced ginger and garlic, add creamy peanut butter, reduced sodium soy sauce, lime juice, brown sugar, and crushed red pepper flakes.
  7. Blend Sauce Smooth: Gradually add water 1 tablespoon at a time, blending continuously until the sauce reaches a smooth, pourable consistency.
  8. Assemble Jars: Divide all ingredients evenly into 4 jars. Start by layering peanut sauce at the bottom.
