Ingredients

  • 175g unsalted butter, plus extra for the tin
  • 100g golden syrup
  • 1 tbsp treacle
  • 175g light brown soft sugar
  • 250g porridge oats
  • 100g fruit & nut mix, roughly chopped
  • 350g mincemeat (vegetarian if needed)

Instructions

  1. Step 1: Butter a 20cm square tin and line it with baking parchment. Preheat your oven to 180°C (160°C fan, gas mark 4).
  2. Step 2: In a large pan over medium-low heat, melt the butter, golden syrup, treacle, and light brown sugar together, stirring until smooth.
  3. Step 3: Remove the pan from heat and stir in the porridge oats, chopped fruit & nut mix, mincemeat, and a pinch of salt until everything is well combined.
  4. Step 4: Pour the mixture into the prepared tin, then press it down firmly and evenly using a silicone spatula to pack it tightly.
  5. Step 5: Bake in the preheated oven for 30 to 35 minutes, until golden on top.
  6. Step 6: Let the flapjack cool in the tin for 30 minutes before transferring to a wire rack to cool completely.
  7. Step 7: Once cool, cut into squares and serve.
