Instructions

  1. Preheat the oven and prepare the muffin tin: Preheat the oven to 375°F. Grease or line a 12-cup muffin tin. Set aside.
  2. Mix butter, lemon zest, and sugar: In a large mixing bowl, beat the butter, lemon zest, and sugar until well-combined.
  3. Add egg and vanilla: Add the egg and vanilla and mix until well-combined, scraping down the sides as needed.
  4. Toss blueberries with flour: In a separate bowl, toss the blueberries with 1/4 cup of flour until coated.
  5. Combine dry ingredients: Add the remaining flour, baking powder, and salt to the batter.
