- 4 tbsp honey
- 2 tbsp soy sauce (all purpose or light soy sauce)
- 1 tbsp white vinegar (or substitute with any other vinegar except balsamic)

- 2 salmon or trout fillets, skinless (6oz / 200g each)
- Olive oil (for frying)

Instructions
- Prepare the salmon: Remove the salmon from the fridge 20 minutes before cooking to bring it to room temperature. Pat dry the salmon skin with a paper towel and season both sides generously with salt and pepper.
- Mix the sauce: In a small bowl, whisk together the honey, soy sauce, white vinegar, and minced garlic until well combined to form the honey garlic sauce.
- Cook the salmon: Heat a drizzle of olive oil in a non-stick frying pan over medium-high heat (lower slightly if your stove runs hot). Place the salmon fillets in the pan and cook the first side for 3 to 4 minutes until golden and caramelized. Flip the salmon and cook the other side for 2 to 3 minutes until golden.
- Add the sauce: Pour the honey garlic sauce over the salmon fillets in the pan. Cook for about 1 minute or until the sauce starts to thicken slightly. Check the doneness by looking at the side of the salmon; aim for medium-rare or your preferred doneness. If the sauce thickens too quickly before the salmon is cooked, add 1 tablespoon of water at a time to loosen it.
- Plate the salmon: Remove the salmon fillets carefully onto serving plates.
- Garnish and serve: Drizzle any remaining sauce from the pan over the salmon. Sprinkle sesame seeds and finely sliced chives or shallots/scallions on top for a fresh and nutty finish. Serve immediately.

- Allowing the salmon to come to room temperature before cooking helps it cook evenly.
- You can substitute trout fillets for salmon if preferred.
