Sausage Patties
- 1 lb / 500g ground pork (or ground beef for a leaner option)
- 1/2 tsp dried ground sage
- 1/2 tsp dried thyme
- 1 tsp onion powder (or garlic powder)
- 3/4 tsp black pepper
- 3/4 tsp salt
- 1/2 tsp sugar (any type)
- 2 tbsp oil (for frying)
Eggs
- 4 eggs
- 1 tbsp oil (for cooking eggs)

- 4 English muffins, cut in half
- 4 slices cheese (cheddar or your preferred type)
Instructions
- Preheat Oven: Preheat your oven to 130C (275F) to gently warm your English muffins later.
- Prepare English Muffins: Place the English muffin halves cut side up on a baking tray. Top each with a slice of cheese. Set aside in the oven to keep warm and help the cheese soften.
- Make Sausage Patties: In a mixing bowl, combine the ground pork (or beef), dried sage, dried thyme, onion powder, black pepper, salt, and sugar. Use your hands to mix thoroughly until well incorporated. Shape the mixture into 4 thick patties, slightly larger than the English muffins as they will shrink when cooked.
- Cook Sausage Patties: Heat 2 tablespoons of oil in a large non-stick skillet over high heat. Add patties (cook in batches if necessary). Cook the patties for 2-3 minutes on the first side until browned, flip them, and cook the other side until browned as well. Optionally, after flipping, place a slice of cheese on each patty and cover with a lid to melt the cheese.
- Cook Eggs: While sausage is cooking, heat another pan over medium-high heat with 1 tablespoon of oil. Lightly spray egg rings with oil and place them in the pan. Crack one egg into each ring. Add about 2 tablespoons of water to the pan, then cover with a lid. Allow the eggs to steam-cook for 1-2 minutes or until cooked to your preference (the recipe recommends runny yolks).
- Assemble the McMuffins: Remove the warm, cheesy English muffin halves from the oven. On the bottom halves, place each sausage patty, then top with a cooked egg. Cover with the top halves of the muffins.
