  • Salt, to taste

  • 1/2 cup vegetable or chicken broth
  • 1/4 cup heavy cream (optional for a creamier sauce)
  • 1/4 cup grated Parmesan cheese, plus extra for serving

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup of the pasta water before draining the pasta in a colander.
  2. Sauté Garlic: While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute or until fragrant, being careful not to burn it.
  3. Cook Mushrooms: Add the sliced mushrooms to the skillet and cook for 5-7 minutes, or until they have released their moisture and are browned. Season with salt and black pepper.
  4. Add Broth: Pour in the vegetable or chicken broth and let it simmer for about 3 minutes until slightly reduced.
  5. Add Cream (Optional): If you want a creamier sauce, stir in the heavy cream and cook for another 2-3 minutes. Adjust the seasoning with salt and pepper as needed.
  6. Toss Pasta in Sauce: Add the drained pasta to the skillet, tossing to coat the pasta in the sauce. If it looks dry, add reserved pasta water a little at a time until you achieve the desired consistency.
  7. Add Cheese: Remove from heat and mix in the grated Parmesan cheese. Toss well to combine.
  8. Serve: Serve the pasta hot, garnished with chopped fresh parsley and additional Parmesan cheese if desired.
