Ingredients
- 1 round or oval bread loaf (see note below)
- 300 g / 10 oz ham, turkey, and other cooked meat slices
- 1 cup roughly chopped antipasto (olives, sun-dried tomato, chargrilled peppers, artichokes, feta, etc.)
- 4 – 6 slices cheese of choice (Swiss used in the original recipe)
- 3 big handfuls baby spinach (~75g / 2.5 oz)
- 50 g / 3 tbsp salted butter, melted
- 1 garlic clove, minced
Instructions
- Step 1: Preheat your oven to 180°C (350°F).
- Step 2: Mix the melted butter with the minced garlic in a small bowl.
- Step 3: Cut the top off the bread loaf to create a lid. Carefully remove the bread inside the loaf and lid, leaving about 1.5 cm (3/5 inch) thick walls and base.
- Step 4: Place the hollowed bread on a large sheet of foil on a baking tray.
- Step 5: Brush the inside of the bread with the garlic butter. Layer the ingredients inside in this order: half the spinach, turkey, antipasto mix, the remaining spinach, ham, then cheese.
- Step 6: Tuck any loose pieces inside the loaf and replace the bread lid on top.
- Step 7: Brush the entire outside of the bread bowl with the remaining garlic butter. Wrap it tightly in foil.
- Step 8: Place something flat and heavy on top, like a cast iron skillet, to weigh it down.
- Step 9: Bake for 20 minutes in the preheated oven. Then remove the weight and foil.
- Step 10: Bake for an additional 10 minutes until the bread is golden and toasted.
- Step 11: Remove from the oven, cut into thick slices, and serve immediately.
Tips & Variations
- Use your favorite bread loaf, ideally a sturdy crusty one like sourdough or a rustic boule.
- Swap out meats and cheese to use what you have—leftover roast beef, chicken, or cheese varieties like cheddar or mozzarella work well.
- For extra flavor, add herbs like thyme or rosemary to the garlic butter mix.
- If you prefer a vegetarian version, substitute the meats with roasted vegetables or grilled mushrooms and extra cheese.
- Serve with a side salad or warm soup for a satisfying meal.
Storage
Store any leftover toasted bread bowl wrapped tightly in foil or airtight container in the refrigerator for up to 2 days. Reheat in the oven at 160°C (320°F) for 10–15 minutes to regain the toasted texture. Avoid microwaving as it can make the bread soggy.
How to Serve

Serve this delicious recipe with your favorite sides.
FAQs
Can I prepare this recipe ahead of time?
You can assemble the bread bowl up to step 7 and keep it covered in the fridge for a few hours. Bake just before serving to keep the bread fresh and toasted.
What if I don’t have a heavy skillet to weigh it down?
You can use any flat, heavy object safe for the oven, such as a wrapped baking dish filled with cans. The goal is to compress the filling for even toasting and melting.

Ideal for a cozy family gathering or a festive snack, this recipe combines convenience and comfort with vibrant Mediterranean flavors.
Ingredients
Bread Bowl
- 1 round or oval bread loaf
Fillings
- 300 g / 10 oz ham, turkey, and other cooked meat slices
- 1 cup roughly chopped antipasto items (olives, sun-dried tomato, chargrilled peppers, artichokes, feta, etc.)
- 4 – 6 slices cheese of choice (Swiss recommended)
- 3 big handfuls baby spinach (~75 g / 2.5 oz)
Butter Garlic Mixture
- 50 g / 3 tbsp salted butter, melted
- 1 garlic clove, minced
Instructions
- Preheat Oven: Preheat your oven to 180°C (350°F), ensuring it is ready for baking the bread bowl later.
- Prepare Butter Mixture: In a small bowl, mix the melted butter with the minced garlic to create a flavorful spread.
- Hollow the Bread: Cut the top off the bread loaf. Hollow out the inside of the loaf and the cut-off lid, leaving about 1.5 cm (3/5 inch) thick walls and bottom to maintain structure.
- Apply Butter Inside Bread: Place the hollowed bread on a large sheet of foil on a baking tray. Dab or brush the garlic butter mixture generously inside the hollowed cavity of the bread.
- Layer Fillings: Layer the ingredients inside the loaf in this order: half of the baby spinach, turkey slices, chopped antipasto ingredients, remaining baby spinach, ham slices, and finally top with cheese slices. Tuck in any protruding fillings inside the loaf to keep everything contained.
- Close Bread Bowl: Place the hollowed bread lid back on top of the filled loaf to close it securely.
- Butter the Exterior: Brush the garlic butter mixture all over the outside of the bread bowl for extra flavor and crispiness.
- Wrap and Weigh Down: Wrap the entire loaf tightly with foil. Place something flat and heavy, such as a cast iron skillet, on top to press the loaf down slightly.
- Bake Covered: Bake in the preheated oven for 20 minutes with the foil and weight on, allowing the fillings to heat through and the flavors to meld.
- Uncover and Bake: Remove the cast iron skillet and foil, then bake for an additional 10 minutes to crisp the bread and melt the cheese until golden on top.
- Serve: Once done, remove from oven, cut into thick slices, and serve immediately to enjoy the warm, melty, and savory bread bowl.
Notes
- Use a sturdy round or oval bread loaf such as sourdough or country bread for best structural integrity.
- You can customize the fillings based on your leftover meats and antipasto from previous meals.
- For added flavor, consider sprinkling fresh herbs like rosemary or thyme in the layering process.
- Pressing the bread while baking helps the layers meld together and prevents the bread from becoming too fluffy inside.
- This dish is best enjoyed fresh out of the oven as the bread will be crispy and the cheese melted.
