Instructions

  1. Prepare the Brie: Remove the brie from the refrigerator and carefully scrape off as much of the rind as possible using a serrated grapefruit spoon or knife. Cut away any thicker rind pieces to ensure a smooth texture in the whipped cheese.
  2. Soften the Brie: Cut the brie wheel into 1-inch chunks and let them sit at room temperature until softened enough to whip easily, typically about 15 to 20 minutes.
  3. Cook the Bacon and Rosemary: Heat a skillet over medium-low heat and add the chopped bacon. Cook gently until the bacon is crispy and the fat has rendered, about 8 to 10 minutes. About 1 minute before finishing, stir in the chopped fresh rosemary to infuse the bacon with herbal flavor. Then remove the bacon and rosemary with a slotted spoon and place on paper towels to drain excess grease.
  4. Whip the Brie: Transfer the softened brie chunks into a stand mixer fitted with the paddle attachment. Beat on medium to high speed for 8 to 10 minutes, scraping down the sides and bottom occasionally, until the brie is smooth and creamy. Whipping may take longer if the brie is still cool.
  5. Assemble and Serve: Spread the whipped brie smooth on a serving plate or in a bowl. Drizzle the 2 tablespoons of maple syrup evenly over the top, then sprinkle with the rosemary bacon mixture. Serve immediately with crackers, crostini, or fresh vegetables for dipping.
