Ingredients
Scale
Sweet Potatoes
- 4 medium sweet potatoes (about 2 pounds)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon ground cinnamon (optional)
Toppings
- 1 cup chopped walnuts (toasted)
- 4 ounces goat cheese (crumbled)
- 1/4 cup maple syrup (warmed)
- Fresh parsley (to taste, for garnish, optional)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easier cleanup if desired.
- Prepare Sweet Potatoes: Peel the sweet potatoes and cut them into 1-inch cubes. Place the cubes in a large mixing bowl.
- Season Sweet Potatoes: Drizzle olive oil over the sweet potato cubes. Sprinkle with salt, black pepper, and ground cinnamon if using. Toss well to coat all pieces evenly.
- Arrange on Baking Sheet: Spread the sweet potatoes in a single layer on the prepared baking sheet, ensuring there is space between cubes to allow for even roasting.
- Roast Sweet Potatoes: Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are golden brown and tender.
- Toast Walnuts: While the sweet potatoes roast, toast the chopped walnuts in a small saucepan over low heat for about 5 minutes, stirring frequently until fragrant but not burnt. Remove and set aside.
- Drizzle Maple Syrup: Once roasted, remove the sweet potatoes from the oven and allow to cool slightly. Drizzle the warm maple syrup evenly over them and gently toss to combine.
- Assemble Toppings: Transfer the sweet potatoes to a serving dish. Sprinkle the toasted walnuts and crumbled goat cheese evenly over the top.
- Garnish & Serve: Garnish with fresh parsley if using, and serve warm for the best flavor and texture.
Notes
- For a nuttier flavor, consider using toasted pecans instead of walnuts.
- The ground cinnamon is optional but adds a warm, aromatic touch.
- If you prefer a vegan version, substitute goat cheese with a dairy-free cheese alternative.
- Make sure not to overcrowd the baking sheet to ensure the sweet potatoes roast evenly and become crispy.
- Maple syrup can be warmed gently in the microwave or in a small pan before drizzling.
