  • butter lettuce cups (6-8 large leaves)
  • 1/4 cup crushed peanuts
  • 2 tablespoons minced chives
  • Spicy Mayo (1/4 cup mayo mixed with 1 teaspoon sriracha)

Instructions

  1. Roast the cauliflower: Preheat the oven to 450 degrees. Toss the cauliflower with olive oil and salt. Roast for 30 minutes.
  2. Make the sauce: Blend soy sauce, brown sugar, garlic, ginger, rice vinegar, sambal oelek, sesame oil, and cornstarch until smooth. Simmer in a saucepan until slightly thickened.
  3. Cauli meets sauce: Pour the sauce over the roasted cauliflower and toss gently to combine.
