Instructions
- Prepare dressing: In a medium bowl, combine 1 cup plain Greek yogurt, 1 tablespoon fresh dill, juice of 1 lemon, 1 clove minced garlic, 1/4 teaspoon salt, and 1/4 teaspoon ground black pepper. Stir until all ingredients are thoroughly mixed.
- Prepare vegetables: Pat dry 1 cucumber with paper towels to remove excess moisture. Thinly slice the cucumber and 1/4 cup red onion.
- Combine and serve: Gently fold the cucumber and red onion into the yogurt dressing until well coated. Serve immediately or chill for 30 minutes to allow flavors to meld.
Notes
- For best results, use full-fat Greek yogurt for a creamier texture.
- You can substitute fresh dill with dried dill if fresh is unavailable, but use about 1 teaspoon dried dill.
