Description

This Tuscan Chicken Wrap combines the rich flavors of sun-dried tomatoes, fresh basil, oregano, and creamy mayonnaise with tender rotisserie chicken, fresh mozzarella, and baby spinach. Wrapped in soft flour tortillas, it’s an easy and delicious meal perfect for lunch or a light dinner.

Ingredients

Scale

Spread Mixture

  • 6 tbsp mayonnaise
  • 3 tbsp chopped fresh basil
  • 2 tbsp chopped sun-dried tomatoes
  • 2 tbsp finely grated Parmesan cheese
  • 1 tbsp chopped fresh oregano or 1 tsp dried oregano
  • 1 scallion, sliced
  • 1 clove garlic, grated

Wrap Fillings

  • 4 (10″) flour wraps
  • 1 1/2 oz packed baby spinach or arugula (about 1 1/2 cups), divided
  • 2 cups cooked chopped rotisserie chicken (about 8 oz), divided
  • 4 oz cherry tomatoes, quartered, divided
  • 4 oz fresh mozzarella, sliced, divided

Instructions

  1. Prepare the Spread Mixture: In a small bowl, combine the mayonnaise, chopped fresh basil, chopped sun-dried tomatoes, finely grated Parmesan, oregano, sliced scallion, and grated garlic. Mix thoroughly until well blended to create a flavorful spread.
  2. Assemble the Wraps: Lay one flour wrap flat and spread one-quarter of the prepared mayonnaise mixture evenly over the surface, leaving about a 1-inch border around the edges. This ensures the wrap holds together well without the filling spilling out.
  3. Add Fillings: On top of the spread, layer one-quarter of the baby spinach, half a cup of chopped rotisserie chicken, one ounce of quartered cherry tomatoes, and one ounce of sliced fresh mozzarella. Distribute the ingredients evenly for balanced flavor in every bite.
  4. Roll the Wrap: Fold in the sides of the wrap, then tightly roll it from the bottom edge upwards, keeping the sides tucked in to form a burrito shape. This technique keeps the ingredients secure and makes the wrap easy to handle.
  5. Repeat for Remaining Wraps: Repeat the spreading, layering, and rolling process with the remaining mayonnaise mixture, wraps, spinach, chicken, cherry tomatoes, and mozzarella.
  6. Serve: Slice each wrap in half diagonally to make them easier to eat and present them on a serving plate. Enjoy immediately for best taste and texture.

Notes

  • Use rotisserie chicken to save time, but grilled or roasted chicken works equally well.
  • For a gluten-free version, substitute the flour wraps with gluten-free tortillas.
  • Fresh herbs significantly enhance the flavor; however, dried oregano can be used as a substitute if fresh is unavailable.
  • Wraps can be prepared a few hours in advance and refrigerated, but assemble right before serving for optimal freshness.
  • Adding a squeeze of lemon juice to the spinach can add a refreshing brightness to the wrap.
