Instructions

  1. Prepare Egg Mixture: In a bowl, whisk together 6 small eggs with a dash of salt and ground black pepper to taste. Optionally, stir in 1 teaspoon of shredded cheddar cheese to the mixture for extra flavor.
  2. Cook Scrambled Eggs: Pour most of the egg mixture into a preheated pan and cook, stirring gently until scrambled and fully set. Reserve some of the uncooked egg mixture for basting the puff pastry dough later.
  3. Prepare Turkey Bacon: Chop all 6 slices of turkey bacon into small pieces for the filling.
  4. Cut Puff Pastry: Roll out the puff pastry sheet on a clean surface. Using a turkey-shaped cookie cutter, cut out turkey-shaped pieces from the puff pastry dough.
  5. Fill Empanadas: On one side of each turkey-shaped pastry, add a filling layer of chopped turkey bacon, scrambled eggs, and 1/2 cup shredded cheddar cheese evenly distributed among the pieces.
  6. Seal Empanadas: Fold the dough to close and use the tines of a fork to crimp and seal the edges of each empanada securely. Make two small punctures at the top of each empanada to allow steam to escape during baking.
