Ingredients
Scale
Meat and Dairy
- 5 strips bacon
- 9 large eggs
- ¼ cup sour cream (at room temperature)
- ½ cup milk
- 1/3 cup feta cheese
- 1 cup shredded Cheddar cheese
Vegetables
- ½ cup white onion, diced
- ½ cup green bell pepper, diced
- 3 green onions, diced
Other
- 3 cups frozen tater tots
- Salt and pepper, to taste
- ½ teaspoon cayenne pepper
Instructions
- Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the casserole.
- Cook Bacon: Place the bacon strips in a large skillet over low heat and cook them slowly until they are crispy on both sides.
- Chop Bacon: Remove the bacon from the skillet and set aside to cool. Once cool enough, roughly chop the bacon into bite-sized pieces.
- Reserve Bacon Grease: Keep 1 tablespoon of the bacon grease in the skillet and drain the rest to use for cooking the vegetables.
- Sauté Vegetables: Add the diced white onion and green bell pepper to the skillet with the reserved bacon grease. Cook over medium heat for about 3 minutes until softened. Season lightly with salt and pepper.
- Prepare Egg Mixture: Crack the eggs into a large bowl and whisk vigorously until foamy, which incorporates air pockets for fluffy eggs.
- Mix Dairy and Seasoning: Beat in the sour cream and milk until fully combined. Add salt, pepper, and cayenne pepper, and mix well.
- Assemble Casserole Base: Lightly grease a 9 x 13-inch casserole dish, then pour in the egg mixture evenly.
- Add Toppings: Sprinkle the crumbled feta cheese evenly over the eggs, followed by the chopped bacon, sautéed onions, and bell peppers. Reserve a small amount of bacon for garnishing if desired.
- Finish Assembly: Top the casserole with shredded Cheddar cheese, then cover the entire dish with frozen tater tots, spreading them evenly.
- Bake: Place the casserole uncovered in the preheated oven and bake for 40 minutes, or until the tater tots are crispy and golden brown.
- Rest: Remove from the oven and let the casserole sit for 5 minutes to set.
- Garnish and Serve: Sprinkle the diced green onions over the top for a fresh finish. Serve warm and enjoy your hearty breakfast casserole!
Notes
- You can reserve some chopped bacon to sprinkle on top just before serving for added texture and flavor.
- To make this dish spicier, increase the cayenne pepper or add chopped jalapeños to the vegetables.
- Use full-fat sour cream and milk for creamier texture, or substitute with lower-fat versions for a lighter dish.
- Make sure the eggs are whisked well to incorporate air for a fluffy texture in the casserole.
- Allow the casserole to rest before serving to help it set and make slicing easier.
