Description

A hearty and delicious Tater Tot Breakfast Casserole combining crispy bacon, fluffy eggs, sautéed vegetables, and melty cheeses topped with golden tater tots for a perfect breakfast or brunch dish.

Ingredients

Scale

Meat and Dairy

  • 5 strips bacon
  • 9 large eggs
  • ¼ cup sour cream (at room temperature)
  • ½ cup milk
  • 1/3 cup feta cheese
  • 1 cup shredded Cheddar cheese

Vegetables

  • ½ cup white onion, diced
  • ½ cup green bell pepper, diced
  • 3 green onions, diced

Other

  • 3 cups frozen tater tots
  • Salt and pepper, to taste
  • ½ teaspoon cayenne pepper

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the casserole.
  2. Cook Bacon: Place the bacon strips in a large skillet over low heat and cook them slowly until they are crispy on both sides.
  3. Chop Bacon: Remove the bacon from the skillet and set aside to cool. Once cool enough, roughly chop the bacon into bite-sized pieces.
  4. Reserve Bacon Grease: Keep 1 tablespoon of the bacon grease in the skillet and drain the rest to use for cooking the vegetables.
  5. Sauté Vegetables: Add the diced white onion and green bell pepper to the skillet with the reserved bacon grease. Cook over medium heat for about 3 minutes until softened. Season lightly with salt and pepper.
  6. Prepare Egg Mixture: Crack the eggs into a large bowl and whisk vigorously until foamy, which incorporates air pockets for fluffy eggs.
  7. Mix Dairy and Seasoning: Beat in the sour cream and milk until fully combined. Add salt, pepper, and cayenne pepper, and mix well.
  8. Assemble Casserole Base: Lightly grease a 9 x 13-inch casserole dish, then pour in the egg mixture evenly.
  9. Add Toppings: Sprinkle the crumbled feta cheese evenly over the eggs, followed by the chopped bacon, sautéed onions, and bell peppers. Reserve a small amount of bacon for garnishing if desired.
  10. Finish Assembly: Top the casserole with shredded Cheddar cheese, then cover the entire dish with frozen tater tots, spreading them evenly.
  11. Bake: Place the casserole uncovered in the preheated oven and bake for 40 minutes, or until the tater tots are crispy and golden brown.
  12. Rest: Remove from the oven and let the casserole sit for 5 minutes to set.
  13. Garnish and Serve: Sprinkle the diced green onions over the top for a fresh finish. Serve warm and enjoy your hearty breakfast casserole!

Notes

  • You can reserve some chopped bacon to sprinkle on top just before serving for added texture and flavor.
  • To make this dish spicier, increase the cayenne pepper or add chopped jalapeños to the vegetables.
  • Use full-fat sour cream and milk for creamier texture, or substitute with lower-fat versions for a lighter dish.
  • Make sure the eggs are whisked well to incorporate air for a fluffy texture in the casserole.
  • Allow the casserole to rest before serving to help it set and make slicing easier.
