Taco Roll-Ups with Crispy Seared Tortillas Recipe

  • Author: Jack
  • Total Time: 25 minutes
  • Yield: 8 roll ups (serves 4 as a main or 6 as appetizer) 1x

Description

These Taco Roll Ups are a fun and tasty twist on traditional tacos, featuring seasoned ground beef wrapped in soft flour tortillas with creamy sour cream, fresh veggies, and melted cheese. Pan-fried until golden and crispy, they make a perfect appetizer, snack, or casual meal served with your favorite dips.

Ingredients

Scale

For the Roll Ups

  • 8 small flour tortillas (soft and pliable)
  • 1 pound ground beef (or ground turkey)
  • 1 packet taco seasoning (or homemade blend)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 cup diced tomatoes (fresh or canned)
  • 1/2 cup chopped lettuce (optional)
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Cook the beef: Heat a large skillet over medium heat and cook the ground beef until browned. Drain excess grease carefully to avoid excess fat in the dish.
  2. Season the beef: Add the taco seasoning packet and a small amount of water to the cooked beef. Stir well and let it simmer for about 5 minutes to develop the flavors.
  3. Warm tortillas: Place the tortillas in the microwave and heat for 10 seconds to soften them and make them more pliable for rolling.
  4. Assemble roll ups: Spread a thin layer of sour cream evenly over each tortilla. Then add a portion of seasoned beef, sprinkle shredded cheese on top, followed by diced tomatoes and optional chopped lettuce.
  5. Roll the tortillas: Roll each tortilla up tightly, making sure the filling stays inside, and place them seam-side down on a plate to keep them secure.
  6. Pan-fry the roll ups: Heat olive oil in a skillet over medium heat. Place the rolled tortillas seam-side down and cook for about 2 minutes per side until they turn golden brown and crispy.
  7. Serve: Remove the roll ups from the skillet and slice into bite-sized pieces. Serve warm with salsa, guacamole, or extra sour cream for dipping.

Notes

  • You can substitute ground beef with ground turkey or chicken for a leaner option.
  • For a gluten-free version, use corn tortillas instead of flour tortillas, but be careful as they are less flexible.
  • Adding lettuce is optional, but it adds a nice refreshing crunch to the roll ups.
  • Adjust the amount of taco seasoning to taste, especially if using a homemade blend.
  • These roll ups can be prepared ahead of time and reheated briefly in the skillet or oven.
  • Serve with your favorite Mexican-style sides like salsa, guacamole, or a tangy crema dip.
