Ingredients
Scale
Super Greens Mix:
- 3 cups baby spinach
- 3 cups baby arugula
- 3 cups red & green Swiss chard
- 3 cups chicory
- 3 cups green cabbage
- 3 cups chopped Brussels sprouts
Kale:
- 1 cup kale, roughly chopped
Berries:
- 1 cup strawberries, diced
- 1 cup blackberries
- 1 cup blueberries
Nuts and Cheese:
- ¼ cup shelled pistachios, roughly chopped
- 2 tablespoons pepitas
- Blueberry goat cheese, crumbled
- ¼ cup plain Greek yogurt
Lemon Herb Dressing:
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon mustard
- 1 tablespoon extra virgin olive oil
- ¼ cup fresh mint leaves, packed
- ¼ cup fresh parsley leaves
- 2 tablespoons fresh oregano leaves, packed
- Coarse salt and ground black pepper to taste
Instructions
- Prepare Dressing – In a blender or food processor, pulse all ingredients for the dressing until completely combined. Add salt and pepper to taste. Set aside.
- Assemble Salad – In a large bowl, toss together all ingredients for the salad with the prepared dressing. Top with freshly ground black pepper as desired.
- Serve and Enjoy – Serve the salad fresh and enjoy immediately.
