A vibrant and nutritious Superfood Berry Lemon Herb Salad that combines a mix of super greens, berries, nuts, and a zesty lemon herb dressing for a refreshing and flavorful dish.


Ingredients

Scale

Super Greens Mix:

  • 3 cups baby spinach
  • 3 cups baby arugula
  • 3 cups red & green Swiss chard
  • 3 cups chicory
  • 3 cups green cabbage
  • 3 cups chopped Brussels sprouts

Kale:

  • 1 cup kale, roughly chopped

Berries:

  • 1 cup strawberries, diced
  • 1 cup blackberries
  • 1 cup blueberries

Nuts and Cheese:

  • ¼ cup shelled pistachios, roughly chopped
  • 2 tablespoons pepitas
  • Blueberry goat cheese, crumbled
  • ¼ cup plain Greek yogurt

Lemon Herb Dressing:

  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon mustard
  • 1 tablespoon extra virgin olive oil
  • ¼ cup fresh mint leaves, packed
  • ¼ cup fresh parsley leaves
  • 2 tablespoons fresh oregano leaves, packed
  • Coarse salt and ground black pepper to taste

Instructions

  1. Prepare Dressing – In a blender or food processor, pulse all ingredients for the dressing until completely combined. Add salt and pepper to taste. Set aside.
  2. Assemble Salad – In a large bowl, toss together all ingredients for the salad with the prepared dressing. Top with freshly ground black pepper as desired.
