Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
- Prepare Strawberry Yogurt Mixture: In a small bowl, gently fold the chopped strawberries into the strawberry yogurt.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the strawberry yogurt mixture. Mix until just combined.
- Fold in Strawberries: Gently fold in any remaining strawberries into the batter.
- Fill Muffin Cups: Fill each muffin cup about 2/3 full with batter.
- Add Topping: Sprinkle the tops of the muffins with turbinado sugar if desired.
- Bake: Bake for 18-22 minutes until a skewer inserted into the center comes out clean.
- Cool and Serve: Let the muffins cool in the tin before transferring to a wire rack to cool completely.
