- 4 large eggs
- 4–6 spring onions, finely chopped
- 100g feta cheese, crumbled
- 30g mature cheddar, grated
Instructions
- Prepare the Tin: Line a 20cm fixed base cake tin, which fits inside your air fryer basket, with a round of baking parchment bigger than the tin to prevent sticking.
- Mix the Ingredients: Beat the eggs in a jug, then add the finely chopped spring onions and crumbled feta cheese. Season the mixture with salt and pepper to taste, and mix well.
- Pour and Level: Pour the egg mixture into the prepared tin and gently jiggle the tin to level the mixture evenly. Trim any overhanging parchment if necessary to fit in the air fryer.
- First Air Fry: Place the tin inside the air fryer basket. Cook at 150°C for 12 minutes to set the base of the frittata.
- Add Cheddar Topping: Carefully pull out the air fryer drawer and evenly sprinkle the grated mature cheddar over the top of the partially cooked frittata.
- Final Cook: Return the tin to the air fryer and cook for an additional 6-8 minutes, or until the frittata is cooked through. Check doneness by inserting a knife into the center; it should come out clean with no liquid egg remaining. The frittata should feel springy when gently pressed.
- Serve: Remove the frittata from the air fryer and serve immediately for the best texture and flavor. Leftovers can be enjoyed cold, served in salads, or on crackers like matzo.
