A flavorful twist on the classic Caesar salad, this Spicy Chicken Caesar Salad features tender grilled chicken marinated in a spicy blend, served with crisp romaine lettuce, garlic croutons, and a creamy Caesar dressing.

Romaine Lettuce:
- 2 Romaine hearts (~180g)
Spicy Grilled Chicken:
- 250g boneless chicken breast (sliced lengthwise)
- 2–3 tbsp Sriracha sauce
- 1 tbsp all-purpose soy sauce
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1 tsp crushed red pepper
- 1/2 tsp ginger powder
- 1 garlic clove, minced
- 1 tsp honey
- 1 tbsp lemon juice
- 2 tbsp vegetable oil (for cooking)
Garlic Croutons:
- 1/2 loaf (~145g) bread (e.g. Ciabatta or Sourdough)
- 2–3 tbsp olive oil
- 1/2 tsp garlic powder
- 1/4 tsp dried parsley
- 1/4 tsp salt
- 1/4 tsp black pepper (freshly ground)
Caesar Dressing:
- 1/2 cup mayonnaise
- 3 tbsp Greek yogurt
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 2 tbsp lemon juice
- 1/4 cup Parmesan (Parmigiano Reggiano), grated
- 1 garlic clove, minced
- 1/4 tsp black pepper (freshly ground)
- Pinch of salt
- 4–5 tbsp Parmesan (Parmigiano Reggiano) shavings
Instructions
- Slice the romaine lettuce into strips after discarding the wilted tops.
- Mix ingredients for Spicy Grilled Chicken (excluding vegetable oil), coat chicken, and marinate.
- Slice and bake the loaf for garlic croutons.
- Prepare Caesar Dressing by blending ingredients and refrigerating.
- Grill marinated chicken until cooked and charred.
- Toss romaine lettuce with Caesar Dressing in a bowl.
- Assemble the salad with lettuce, croutons, chicken, dressing, and Parmesan shavings.
Rinse and dry the lettuce thoroughly.
Notes
- Ensure lettuce is dry to prevent a watery salad.
- Adjust Sriracha for preferred spice level.
- Extra dressing can be served on the side.
