A flavorful twist on the classic Caesar salad, this Spicy Chicken Caesar Salad features tender grilled chicken marinated in a spicy blend, served with crisp romaine lettuce, garlic croutons, and a creamy Caesar dressing.

  • 2 Romaine hearts (~180g)

Spicy Grilled Chicken:

  • 250g boneless chicken breast (sliced lengthwise)
  • 23 tbsp Sriracha sauce
  • 1 tbsp all-purpose soy sauce
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1 tsp crushed red pepper
  • 1/2 tsp ginger powder
  • 1 garlic clove, minced
  • 1 tsp honey
  • 1 tbsp lemon juice
  • 2 tbsp vegetable oil (for cooking)

Garlic Croutons:

  • 1/2 loaf (~145g) bread (e.g. Ciabatta or Sourdough)
  • 23 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp dried parsley
  • 1/4 tsp salt
  • 1/4 tsp black pepper (freshly ground)

Caesar Dressing:

  • 1/2 cup mayonnaise
  • 3 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tbsp lemon juice
  • 1/4 cup Parmesan (Parmigiano Reggiano), grated
  • 1 garlic clove, minced
  • 1/4 tsp black pepper (freshly ground)
  • Pinch of salt
  • 45 tbsp Parmesan (Parmigiano Reggiano) shavings

Instructions

  1. Slice the romaine lettuce into strips after discarding the wilted tops.
  2. Rinse and dry the lettuce thoroughly.

  3. Mix ingredients for Spicy Grilled Chicken (excluding vegetable oil), coat chicken, and marinate.
  4. Slice and bake the loaf for garlic croutons.
  5. Prepare Caesar Dressing by blending ingredients and refrigerating.
  6. Grill marinated chicken until cooked and charred.
  7. Toss romaine lettuce with Caesar Dressing in a bowl.
  8. Assemble the salad with lettuce, croutons, chicken, dressing, and Parmesan shavings.

  • Ensure lettuce is dry to prevent a watery salad.
