Ingredients

  • 400g (14oz) skinless boneless chicken thighs, thinly sliced (about 0.75cm / 1/4″ thick)
  • 500g (1 lb) hokkien noodles, lo mein, or other noodles, cooked as per packet, rinsed and drained
  • 1 tbsp peanut oil or any neutral oil
  • 2 garlic cloves, finely minced
  • 7 green onions, cut into 5cm (2″) lengths; separate dark green soft parts from white/pale green firmer parts
  • 5 cups green cabbage, sliced about 1cm (0.4″) thick (Napa or Chinese cabbage works too)
  • 2 tbsp kecap mani (sweet soy sauce)
  • 1/4 cup fish sauce
  • 1 pinch white pepper
  • 1 tbsp or more chilli crisp, chilli paste, or sriracha (adjust to taste)

Instructions

  1. Step 1: In a small bowl, mix the kecap mani, fish sauce, and white pepper to make the sauce.
  2. Step 2: Toss the sliced chicken with 2 tablespoons of the sauce. No need to marinate.
  3. Step 3: Heat the oil in a large 30cm (12″) non-stick pan over high heat until very hot.
  4. Step 4: Add the chicken and cook for 2 minutes, then add the garlic and the white parts of the green onions. Cook for another 30 seconds until the chicken is just cooked through.
  5. Step 5: Add the cabbage and toss for 1 1/2 minutes until it begins to soften.
  6. Step 6: Add the noodles and half the sauce. Toss for about a minute until the sauce has mostly absorbed and there is no pooling liquid.
  7. Step 7: Add the remaining sauce and toss again until noodles are evenly coated and no liquid remains, about 1 minute. Stir in the chilli crisp or your chosen spicy condiment towards the end.
  8. Step 8: Toss in the dark green parts of the green onions and cook just until wilted, about 20 seconds.
  9. Step 9: Serve immediately and enjoy your quick and tasty noodle stir fry.

Tips & Variations

  • Substitute chicken thighs with chicken breast or firm tofu for a different protein option.
  • Use Napa cabbage for a sweeter, milder flavor.
  • Add extra veggies like bell peppers or carrots to increase color and nutrition.
  • Adjust the level of spice by adding more or less chilli crisp or sriracha.
  • To save time, use pre-cooked refrigerated noodles or pre-cut vegetables if available.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently in a pan over medium heat or in the microwave until warmed through. Noodles can dry out when stored, so adding a splash of water during reheating helps restore moisture.

How to Serve

The image shows four dark bowls filled with stir-fried noodles, chicken pieces, and green vegetables on a white marbled surface. Each bowl has thick, glossy yellow noodles mixed with light brown cooked chicken slices and bright green vegetable strips, likely green onions or bell peppers. The noodles have a slight shine from the sauce, and some red chili flakes are sprinkled on top for color contrast. Black chopsticks rest on the edge of the nearest bowl, lifting some noodles. Next to the bowls is a small dark dish with chili flakes and a golden spoon. The overall look is warm and cozy with rich, earthy colors. photo taken with an iphone --ar 4:5 --v 7

FAQs

Can I use other types of noodles for this stir fry?

Yes, lo mein, egg noodles, or even rice noodles work well. Just follow cooking instructions and rinse cooled noodles before stir frying.

Is it necessary to separate the green onions?

Separating the white and green parts ensures they cook properly—white parts soften and release more flavor when cooked early, while the green parts are added last to keep their brightness and crunch.

Ingredients

Scale

Protein and Vegetables

  • 400g/14oz skinless, boneless chicken thighs, thinly sliced (0.75cm/1/4″ thick)
  • 5 cups green cabbage, sliced (~1cm/0.4″ thick) (Napa/Chinese cabbage also works)
  • 7 green onions, cut into 5cm/2″ lengths (separate soft dark green parts from the white/pale green firmer parts)

Noodles

  • 500g/1 lb Hokkien noodles, lo mein, or other noodles (prepared according to packet instructions, rinsed well, drained)

Sauce and Seasonings

  • 1 tbsp peanut oil (or any other neutral oil)
  • 2 garlic cloves, finely minced
  • 2 tbsp kecap mani (sweet soy sauce)
  • 1/4 cup fish sauce
  • 1 pinch white pepper (can substitute black pepper)
  • 1 tbsp+ chili crisp, chili paste, or sriracha (adjust to taste)

Instructions

  1. Make the Sauce: In a small bowl, combine kecap mani (sweet soy), fish sauce, and white pepper to create the stir fry sauce. Set aside.
  2. Toss Chicken with Sauce: Add 2 tablespoons of the prepared sauce to the sliced chicken and toss to coat evenly. No need to marinate; proceed immediately to cooking.
  3. Cook Chicken: Heat 1 tablespoon peanut oil in a large 30cm/12″ non-stick pan over high heat until very hot. Add the chicken pieces and cook for 2 minutes, stirring occasionally until mostly cooked through. Add minced garlic and the white parts of the green onions, cooking for another 30 seconds until fragrant and chicken is just cooked.
  4. Cook Cabbage: Add sliced cabbage to the pan and toss for about 1 1/2 minutes until it starts to soften and become floppy but still retains some texture.
  5. Add Noodles and Sauce: Add the prepared noodles and half of the sauce to the pan. Toss for about 1 minute until the sauce is absorbed and no longer pooling. Then add the remaining sauce, continuing to toss for another minute to evenly coat the noodles and vegetables without liquid remaining. Stir in the chili crisp, chili paste, or sriracha toward the end, adjusting spice level to preference.
  6. Finish with Green Onion Tops & Serve: Finally, toss in the soft dark green parts of the green onions just until wilted (about 20 seconds). Divide the stir fry into bowls and serve hot. Get ready for some noodle slurping fun!

Notes

  • Note 1: Use noodles that have been cooked, rinsed, and drained according to package instructions to prevent clumping and to ensure the noodles reheat evenly in the pan.
  • Note 2: Kecap mani is a sweet soy sauce commonly used in Southeast Asian cooking. You can substitute with regular sweet soy sauce or a mixture of soy sauce and brown sugar if unavailable.
  • Note 3: Adjust the amount of chili crisp or chili paste according to your preferred level of spiciness.
  • Note 4: Tossing the sauce in two batches allows for better absorption and avoids soggy noodles.
