Southwest Chicken Marinade Recipe

  • Author: Jack
  • Total Time: 20-22 minutes plus marinating time
  • Yield: 4 servings 1x

Description

This Southwest Chicken Marinade recipe offers a zesty and flavorful way to prepare boneless, skinless chicken breasts. Marinated in a blend of chili powder, cumin, garlic powder, lime juice, and other spices, the chicken is grilled to juicy perfection, making it a perfect main dish for summer barbecues or quick weeknight dinners.

Ingredients

Scale

Chicken

  • 2 pounds boneless, skinless chicken breast (thin or butterflied)

Marinade and Seasoning

  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt (pressed)
  • ½ teaspoon ground pepper
  • ¼ teaspoon cayenne pepper (optional)
  • 1 tablespoon fresh lime juice (about 1 lime)
  • 2 tablespoons vegetable oil

Instructions

  1. Prepare the seasoning: In a small bowl, thoroughly stir together the chili powder, cumin, garlic powder, salt, ground pepper, and optional cayenne pepper to create the southwest seasoning blend.
  2. Marinate the chicken: Use a fork to poke holes all over the chicken breasts to help the marinade penetrate. Place the chicken in a dish or a zip-top bag. Pour the seasoning evenly over the chicken on both sides, add the fresh lime juice and vegetable oil, then mix or massage to combine. Refrigerate for a minimum of 20 minutes, up to 4 hours for more flavor.
  3. Preheat the grill: Heat the grill to medium heat, and brush the grill grates lightly with oil to prevent the chicken from sticking during cooking.
  4. Grill the chicken: Place the marinated chicken breasts on the grill. Cook for 4-6 minutes per side depending on the thickness, ensuring the internal temperature reaches 165˚F for safe consumption.
  5. Rest and serve: Remove the grilled chicken from the heat and allow it to rest for 5 minutes to retain juices. Serve the chicken warm and enjoy the vibrant southwest flavors.

Notes

  • Marinate chicken for at least 20 minutes, but no longer than 4 hours to avoid the acidity breaking down the meat too much.
  • If you prefer a spicier kick, increase the cayenne pepper or add a dash of hot sauce to the marinade.
  • You can also cook the marinated chicken in a skillet over medium heat if a grill is unavailable.
  • For even thinner chicken, pound the breasts before marinating for faster cooking and more even flavor absorption.
  • Ensure chicken is fully cooked to 165˚F internal temperature for food safety.
