For the Stew:
- 1 medium sweet onion, diced to 1 inch
- 2 medium carrots, peeled and sliced into ½-inch coins
- 2 stalks celery, sliced into ½-inch coins
- 2 lb chuck roast, large fat deposits trimmed, cut into 2-inch cubes
- 2 tbsp cornstarch or arrowroot powder
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 cup beef broth
- 28-oz can crushed tomatoes (fire roasted if available)
- 1 tsp Italian seasoning
- 1.5 tsp kosher salt
- 1 tsp ground pepper
- 2 sprigs fresh thyme
- 1 bay leaf
- ½ medium butternut squash, peeled and cubed (2 cups)
Instructions
- Layer the Vegetables: Spread onion, carrots, and celery at the bottom of the slow cooker.
- Prepare the Beef: Coat beef cubes with cornstarch or arrowroot powder.
- Sear the Beef: Brown the beef in a skillet, then transfer to the slow cooker.
- Deglaze the Pan: Saute garlic, deglaze with beef broth, and pour over the beef in the slow cooker.
- Add Remaining Ingredients: Mix in tomatoes, seasonings, thyme, bay leaf, and butternut squash.
- Cook: Seal slow cooker and set to LOW for 6-8 hours.
- Finish and Serve: Stir the stew, adjust seasoning, and serve hot.
