  • Yield: 6 servings 1x

Description

This comforting Slow Cooker Ham and Potato Soup combines hearty diced ham, hearty potatoes o’Brien, and flavorful vegetables simmered together in a creamy broth. Perfect for a cozy meal, this easy-to-make soup allows the slow cooker to meld the savory flavors to perfection, creating a rich and satisfying dish topped with cheddar cheese and green onions.

Ingredients

Scale

Main Ingredients

  • 32 ounces frozen potatoes o’Brien (1 bag)
  • 4 cups chicken broth
  • 16 ounces diced ham
  • 1 cup diced celery
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 4 tablespoons butter
  • 1.5 cups half and half
  • 1/2 cup sour cream

Toppings

  • Shredded cheddar cheese
  • Sliced green onions
  • Additional sour cream (optional)

Instructions

  1. Prepare Ingredients: Gather all the ingredients: frozen potatoes o’Brien, chicken broth, diced ham, celery, salt, pepper, and butter.
  2. Add to Slow Cooker: Place the frozen potatoes, chicken broth, diced ham, diced celery, salt, pepper, and butter into the slow cooker.
  3. Cook Soup: Cover the slow cooker and cook on high for 4-5 hours or on low for 6-8 hours, until the potatoes are tender and flavors meld.
  4. Finish and Thicken: Once cooking is complete, stir in the half and half and sour cream. Use a potato masher to mash some of the potatoes directly in the soup to thicken it up, then stir well.
  5. Serve and Garnish: Ladle the soup into bowls and top with shredded cheddar cheese, sliced green onions, and additional sour cream if desired. Serve warm.

Notes

  • For a thicker soup, mash more potatoes or add a small amount of cornstarch slurry before finishing.
  • Use smoked ham for an extra depth of flavor.
  • Adjust seasoning with salt and pepper according to taste after cooking.
  • Leftover soup can be refrigerated up to 3 days or frozen for up to 3 months.
  • To make it dairy-free, substitute half and half and sour cream with coconut milk or plant-based alternatives.
