Marinade Ingredients
- thumb-sized piece ginger, grated
- 1 large garlic clove, grated
- 1 tsp honey
- 1½ tsp soy sauce
- 1 tsp sesame oil
- ½ lime, juiced
- 1 tbsp sesame seeds
Skewers & Protein
- 1 skinless chicken breast, cut into 10 pieces
- 10 raw king prawns
- 1 broccoli head, cut into 20 florets
- 20 cocktail skewers
Instructions
- Prepare the Marinade and Marinate: Combine grated ginger, grated garlic, honey, soy sauce, sesame oil, lime juice, and sesame seeds in a bowl. Divide the marinade evenly into two separate bowls; add the chicken pieces to one bowl and the prawns to the other. Toss both thoroughly to coat, then refrigerate and let marinate for 15 minutes.
- Cook the Chicken and Prawns: Heat a frying pan over medium-high heat. Cook the chicken pieces for 3 minutes, then push them to one side of the pan. Add the prawns to the other side and continue cooking for 2 minutes until the prawns turn pink and the chicken is cooked through. (Alternatively, use two pans to prevent cross-contamination if required.)
- Steam the Broccoli: Place the broccoli florets in a microwave-safe bowl with a splash of water. Cover and microwave on high for 5 minutes until tender but still crisp.
- Assemble the Skewers: Thread half of the cocktail skewers with alternating chicken pieces and broccoli florets. Thread the remaining skewers with prawns and broccoli florets, alternating as well.
