Marinade Ingredients

  • thumb-sized piece ginger, grated
  • 1 large garlic clove, grated
  • 1 tsp honey
  • 1½ tsp soy sauce
  • 1 tsp sesame oil
  • ½ lime, juiced
  • 1 tbsp sesame seeds

Skewers & Protein

  • 1 skinless chicken breast, cut into 10 pieces
  • 10 raw king prawns
  • 1 broccoli head, cut into 20 florets
  • 20 cocktail skewers

Instructions

  1. Prepare the Marinade and Marinate: Combine grated ginger, grated garlic, honey, soy sauce, sesame oil, lime juice, and sesame seeds in a bowl. Divide the marinade evenly into two separate bowls; add the chicken pieces to one bowl and the prawns to the other. Toss both thoroughly to coat, then refrigerate and let marinate for 15 minutes.
  2. Cook the Chicken and Prawns: Heat a frying pan over medium-high heat. Cook the chicken pieces for 3 minutes, then push them to one side of the pan. Add the prawns to the other side and continue cooking for 2 minutes until the prawns turn pink and the chicken is cooked through. (Alternatively, use two pans to prevent cross-contamination if required.)
  3. Steam the Broccoli: Place the broccoli florets in a microwave-safe bowl with a splash of water. Cover and microwave on high for 5 minutes until tender but still crisp.
  4. Assemble the Skewers: Thread half of the cocktail skewers with alternating chicken pieces and broccoli florets. Thread the remaining skewers with prawns and broccoli florets, alternating as well.
