Schwäbischer Zwiebelkuchen Recipe

  • Author: Jack
  • Total Time: 1 hour 5 minutes
  • Yield: 8 servings 1x

Description

Schwäbischer Zwiebelkuchen is a traditional German savory onion tart featuring a rich mixture of caramelized onions, crème fraîche, eggs, and aromatic caraway seeds baked on a crisp prepared pizza crust. This comforting dish offers a perfect balance of creamy and slightly spicy flavors, topped with fresh chives for added brightness.

Ingredients

Scale

Onion Filling

  • 4 pounds White Onion, sliced
  • 1 stick (113g) Butter
  • Kosher Salt, to taste
  • Cayenne Pepper, to taste
  • 1 cup Crème Fraîche
  • 2 large Eggs
  • 1 teaspoon Caraway Seeds

Crust and Garnish

  • 1 package Prepared Pizza Crust (approximately 12-inch round)
  • Butter, for drizzling (to taste)
  • 1 pinch Fresh Chives, finely chopped

Instructions

  1. Sauté Onions: In a large skillet, melt the butter over medium heat and add the sliced white onions. Cook gently, stirring often, until the onions are lightly caramelized and soft, about 20-25 minutes. Season with kosher salt and cayenne pepper to taste.
  2. Prepare Cream Mixture: In a separate bowl, combine the crème fraîche, eggs, and caraway seeds. Whisk together until smooth. Adjust seasoning with salt and pepper if needed. Allow this mixture to cool to room temperature.
  3. Combine Mixtures: Add the cooled crème fraîche mixture to the caramelized onions and stir thoroughly to combine all ingredients evenly.
  4. Assemble Zwiebelkuchen: Roll out the prepared pizza crust onto a baking sheet or pizza stone. Evenly spread the onion and cream mixture across the crust surface. Lightly drizzle with melted butter over the top.
  5. Bake: Preheat the oven to 375°F (190°C). Bake the assembled Zwiebelkuchen for approximately 30-35 minutes until the topping is set, slightly golden, and heated through.
  6. Garnish and Serve: Remove from the oven, slice into portions, and sprinkle with fresh chopped chives before serving. Enjoy warm.

Notes

  • The sweetness of the onions develops best with slow, gentle sautéing; avoid browning too quickly.
  • Caraway seeds add a traditional earthy flavor; feel free to adjust quantity based on preference.
  • Use a good quality prepared pizza crust for a crisp and sturdy base.
  • Zwiebelkuchen is excellent served with a light salad or a glass of dry white wine.
