Instructions

  1. Preheat and Sauté: Preheat your oven to 375 degrees F (190 degrees C). In a medium oven-proof frying pan, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and sauté until caramelized and soft, about 8-10 minutes.
  2. Add Vegetables: Add the roasted and cubed sweet potatoes along with 1 cup of fresh baby spinach to the pan. Stir gently to combine with the caramelized onions and cook for 2-3 minutes until the spinach wilts slightly.
  3. Prepare Egg Mixture: In a bowl, whisk together 6 small eggs with salt and ground black pepper to taste. Pour the egg mixture evenly over the vegetables in the pan. Stir lightly to ensure even distribution of ingredients within the eggs.
  4. Add Cheese and Bake: Sprinkle 1/2 cup of shredded Gruyère cheese evenly over the top of the egg and vegetable mixture. Transfer the pan to the preheated oven and bake for 20-25 minutes, or until the frittata is set and the top is golden brown.
