For the Salmon:

  • lb salmon (cut in bite-size pieces)
  • 1 tsp salt
  • 0.5 Tbsp chili flakes
  • 0.5 Tbsp vegetable oil
  • 0.5 Tbsp butter

For the Ginger Avocado Salsa:

  • 0.5 medium-sized cucumber (finely chopped)
  • 0.5 red onion (finely chopped)
  • 1 avocado (peeled, de-seeded and finely chopped)
  • 2 tsp ginger (finely grated)
  • ⅔ cup fresh cilantro (chopped, loosely packed)
  • 1.5 limes (juice of, according to taste)
  • 1 tsp honey
  • 0.5 tsp chili flakes (adjust to heat and taste)
  • 0.5 tsp salt (according to taste)

Additional Ingredients:

  • 6 small flour tortillas
  • 2 handfuls arugula (or other leafy greens)
  • ⅔ cups greek yoghurt (or other natural yoghurt)
  • 3 lime wedges

Instructions

  1. Prepare the Salmon: Mix the salmon with the chili flakes and salt. Set aside to let the flavors set, for about 10 minutes.
  2. Make the Ginger Avocado Salsa: Mix all the salsa ingredients in a bowl, taste test, and adjust the seasoning. Set aside to rest for at least 10 minutes.
  3. Cook the Salmon: Heat a pan over medium-high heat, add vegetable oil and butter. Cook salmon for a few minutes until done to your liking.
  4. Assemble the Tacos: Place arugula, cooked salmon, salsa, and yogurt on a tortilla. Serve with lime wedges.

  • You can customize the heat level of the salsa by adjusting the amount of chili flakes.
