A delicious and refreshing Salami-Mozzarella Tortellini Pasta Salad combining savory salami, creamy mozzarella, fresh vegetables, and a zesty Italian dressing, perfect for a light lunch or a flavorful side dish.

Ingredients

Scale

Main Ingredients

  • 12 oz tortellini (fresh or frozen)
  • 6 oz salami, diced
  • 8 oz mozzarella cheese, cubed
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup olives, sliced (optional)

Dressing & Seasoning

  • 1/2 cup Italian dressing
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Cook Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, typically about 5-7 minutes for fresh tortellini or 8-10 minutes for frozen. Once cooked, drain the tortellini in a colander and rinse under cold water to stop the cooking process. Set aside.
  2. Combine Ingredients: In a large mixing bowl, combine the diced salami, cubed mozzarella, cherry tomatoes, cucumber, red bell pepper, and red onion. If using olives, add them to the bowl as well.
  3. Add Tortellini: Add the cooled tortellini to the mixing bowl with the vegetables and salami.
  4. Dress the Salad: Drizzle the Italian dressing over the salad and toss gently to combine all the ingredients. Season with salt and pepper to taste.
  5. Chill: Allow the salad to chill in the refrigerator for about 10 minutes to let the flavors meld together before serving.
  6. Garnish and Serve: Garnish with fresh basil leaves if desired, and serve cold.

Notes

  • Use fresh tortellini if possible for the best texture.
  • Feel free to substitute salami with pepperoni or cooked ham.
  • Olives are optional and can be omitted for a milder flavor.
  • Prep ahead and refrigerate for even more flavor infusion.
  • This salad is best served cold or at room temperature.
