- Prepare the Dough: Preheat the oven to 375˚F (190˚C). In a large bowl, combine the red velvet cake mix, vegetable oil, and eggs. Use an electric mixer or mix by hand until the dough is smooth and well combined.
- Shape the Cookies: Using a rounded tablespoon, drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper or a nonstick surface, spacing them about 2 inches apart to allow for spreading during baking.
- Bake the Cookies: Place the baking sheet in the preheated oven and bake for 9 to 10 minutes, or until the cookies are set on the edges and no longer shiny on top. Remove from oven and allow cookies to cool on the baking sheet for 2 to 3 minutes before transferring them to a wire rack to cool completely.
- Make the Cream Cheese Frosting: In a mixing bowl, beat the softened cream cheese together with 3 tablespoons of heavy cream (or milk) until smooth. Add the vanilla extract and salt, mixing again until fully combined.
