- 2 tbsp lemon juice
- 2 tbsp maple syrup
- 2 tbsp chia seeds

- Prepare the Strawberries: Hull the strawberries by removing the green leafy tops. Then, blend approximately three-quarters of the strawberries until smooth or slightly chunky, depending on your preference.
- Chop Remaining Strawberries: Roughly chop the remaining quarter of the strawberries to add texture and body to the jam.
- Combine Ingredients: In a mixing bowl, combine the blended strawberries, chopped strawberries, lemon juice, maple syrup, and chia seeds. Mix everything thoroughly to ensure even distribution of chia seeds.
- Thicken the Jam: Leave the mixture to sit for 1 hour at room temperature, stirring occasionally. During this time, the chia seeds will absorb liquid and thicken the jam naturally.
- Store: Transfer the jam into a sterilized jar. Store it in the refrigerator where it will keep for up to 4 days, or freeze it for up to 1 month for longer storage.

- If you prefer a smoother jam, blend all the strawberries instead of leaving some chopped.
- Adjust the sweetness by adding more or less maple syrup according to taste.
