  • 400g strawberries, hulled
  • 2 tbsp lemon juice
  • 2 tbsp maple syrup
  • 2 tbsp chia seeds

Instructions

  1. Prepare the Strawberries: Hull the strawberries by removing the green leafy tops. Then, blend approximately three-quarters of the strawberries until smooth or slightly chunky, depending on your preference.
  2. Chop Remaining Strawberries: Roughly chop the remaining quarter of the strawberries to add texture and body to the jam.
  3. Combine Ingredients: In a mixing bowl, combine the blended strawberries, chopped strawberries, lemon juice, maple syrup, and chia seeds. Mix everything thoroughly to ensure even distribution of chia seeds.
  4. Thicken the Jam: Leave the mixture to sit for 1 hour at room temperature, stirring occasionally. During this time, the chia seeds will absorb liquid and thicken the jam naturally.
  5. Store: Transfer the jam into a sterilized jar. Store it in the refrigerator where it will keep for up to 4 days, or freeze it for up to 1 month for longer storage.

  • If you prefer a smoother jam, blend all the strawberries instead of leaving some chopped.
