Ingredients

Scale

Raisin Soak

  • 1 cup Raisins
  • 1 cup Water

Wet Ingredients

  • 1 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 Egg

Dry Ingredients

  • 1 3/4 cup All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Ground Cloves
  • 1/2 teaspoon Ground Cinnamon
  • 1/2 teaspoon Ground Allspice
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder

Instructions

  1. Preheat Oven: Set your oven to 375 degrees F (190 degrees C) and allow it to fully preheat while you prepare the dough.
  2. Soak Raisins: In a small pot, bring 1 cup of water to a boil. Add 1 cup of raisins and boil for 8 to 10 minutes until the water reduces to about 3 tablespoons. Remove from heat and let the raisin water mixture cool completely.
  3. Cream Sugars and Egg: In a mixing bowl, combine 1 cup brown sugar, 1/2 cup granulated sugar, and 1 egg. Use a spatula to cream these ingredients together until smooth and well incorporated.
  4. Mix Dry Ingredients: In another bowl, whisk together 1 3/4 cups all-purpose flour, 1/2 teaspoon salt, 1/4 teaspoon ground cloves, 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground allspice, 1/2 teaspoon baking soda, and 1/2 teaspoon baking powder until evenly combined.
  5. Combine Mixtures Gradually: Add a small portion of the flour mixture into the sugar mixture, followed by a few of the undrained soaked raisins. Mix thoroughly. Repeat this process about five or six times until the dough is smooth and fully combined.
  6. Prepare Baking Tray: Line a baking tray with parchment paper or lightly spray it with baking spray to prevent sticking.
  7. Shape Cookies: Using an ice cream scoop or tablespoon, portion out about 2 tablespoons of dough per cookie. Place the scoops onto the prepared baking tray, leaving about 3 inches of space between each cookie for spreading.
  8. Bake Cookies: Place the tray in the preheated oven and bake the cookies at 375 degrees F (190 degrees C) for 15 minutes until they are golden brown and set.
  9. Cool: Remove the cookies from the oven and allow them to cool completely on the baking tray or a wire rack.
  10. Serve: Once cooled, serve and enjoy these flavorful raisin spiced cookies as a delightful snack or dessert.

Notes

  • Boiling the raisins softens them and infuses a little extra flavor into the dough.
  • Ensure the dough is not overly mixed to keep cookies tender.
  • Space cookies well on the baking tray to prevent them from sticking together.
  • Store cooled cookies in an airtight container to maintain freshness for up to a week.
  • Optional: Add chopped nuts like walnuts or pecans for added texture.
