These Rainbow Real Fruit Popsicles are a vibrant and healthy treat made from layers of blended real fruit and organic juice. Perfect for a refreshing summer snack, they combine strawberries, kiwi, pineapple, and blueberries into colorful, natural popsicles without any added sugars or artificial ingredients.

Strawberry Layer

  • 1 cup frozen strawberries
  • ¼ cup organic fruit juice or water

Kiwi Layer

  • 3 kiwis, peeled and sliced (or frozen)
  • 2 tablespoons organic fruit juice or water

Pineapple Layer

  • 1 cup frozen pineapple
  • 3 tablespoons organic fruit juice or water

Blueberry Layer

  • ½ cup frozen blueberries
  • 23 tablespoons organic fruit juice or water

Instructions

  1. Strawberry Layer: Add the frozen strawberries and ¼ cup of organic fruit juice or water to a blender. Blend until smooth, adding more liquid if needed for consistency. Pour a small amount into each popsicle mold, insert the popsicle sticks, and freeze for 20 minutes.
  2. Kiwi Layer: Peel the kiwis and add them to the blender with 2 tablespoons of organic fruit juice or water. Blend until smooth, adding more liquid if necessary. Pour a small amount into molds over the strawberry layer, place the popsicle sticks back in, and freeze for another 20 minutes.
  3. Pineapple Layer: Blend the frozen pineapple with 3 tablespoons of organic fruit juice or water until smooth. Pour into the popsicle molds over the kiwi layer, leaving space at the top for the last layer. Freeze another 20 minutes. Remove popsicle sticks if your mold style requires it.
  4. Blueberry Layer: Add the frozen blueberries and 2-3 tablespoons of organic fruit juice or water to the blender. Blend smooth and pour into the molds, filling nearly to the top to allow for expansion. Freeze for at least 12 hours until fully set.
  5. Serving Instructions: To release the popsicles, run the outside of the molds briefly under cold water to loosen. Gently pull on the popsicle sticks, and serve immediately for a refreshing, colorful treat.
