Dip Ingredients

  • 130g feta, crumbled
  • 150g thick Greek-style yogurt
  • ½ lemon, zested
  • ¼ bunch of dill
  • ¼ bunch of basil
  • 3 tbsp extra virgin olive oil, plus extra for drizzling

Seasoning

  • 1 tsp coriander seeds
  • 1 tsp za’atar or chilli flakes

Accompaniment

  • 1 bunch of radishes (washed and trimmed)

Instructions

  1. Prepare the Whipped Feta Dip: Put the crumbled feta, thick Greek-style yogurt, lemon zest, dill, basil, and olive oil into a food processor or a high-speed blender. Pulse the mixture until it reaches a creamy, smooth texture, making sure all ingredients are well combined. Spoon the whipped feta into a shallow serving bowl and set aside.
  2. Toast the Coriander Seeds: Heat a dry frying pan over low to medium heat. Add the coriander seeds and gently toast them for a few minutes until they become fragrant, taking care not to burn them. Remove from heat once toasted.
  3. Season and Serve: Scatter the toasted coriander seeds over the whipped feta dip. Sprinkle with za’atar or chilli flakes according to your preference for spice. Drizzle a little extra olive oil over the top. Serve immediately with fresh radishes for dipping.
