- 50g unsalted cashew nuts
- 400g frying beef steak, cut into strips
- 1 large head broccoli, broken into florets
- 4 sticks celery, sliced
- 150ml beef stock (from a cube is fine)
- 2 tbsp horseradish sauce
- 2 tbsp low-fat fromage frais
Instructions
- Toast the nuts: Heat the olive oil in a frying pan over medium heat, add the cashew nuts, and toss for a few seconds until they are lightly toasted and fragrant. Remove the nuts from the pan and set aside.
- Cook the beef: Season the beef steak strips generously with black pepper. Increase the heat to high and stir-fry the strips for 1-2 minutes until they are browned on the outside but still tender. Remove the beef from the pan and set aside with the toasted nuts.
- Cook the vegetables: Add the broccoli florets and sliced celery to the hot pan. Stir-fry the vegetables for about 2 minutes, allowing them to maintain some crunch.
- Simmer with stock: Pour the beef stock over the vegetables, cover the pan with a lid, and let it simmer gently for 2 minutes to soften the vegetables slightly while retaining their vibrant color.
- Prepare the creamy horseradish sauce: While the vegetables simmer, mix together the horseradish sauce and low-fat fromage frais in a small bowl until smooth and creamy.
- Combine all ingredients: Return the browned beef to the pan and toss it with the cooked vegetables. Sprinkle the toasted nuts over the top and give everything a gentle mix to combine all flavors.
- Serve: Plate the beef and broccoli mixture and serve with the creamy horseradish sauce on the side. This dish pairs wonderfully with mashed potatoes for a complete meal.
Notes
- For an Oriental twist, season the beef with 1 tsp Chinese five spice powder and stir-fry in a mix of olive oil and sesame oil. Replace horseradish sauce with soy sauce.
- Add more vegetables such as sliced carrots, mushrooms, cabbage, leeks, or crushed garlic cloves to increase the veggie content.
- Using beef stock from a cube is a convenient and flavorful option.
