Peaches & Cream Brioche Tiramisu Recipe

  • Author: Jack
  • Total Time: 1 hour 20 minutes (including chilling time)
  • Yield: 6-8 servings 1x

Description

A delightful twist on the classic tiramisu, featuring juicy peach slices, boozy peach schnapps syrup, and rich whipped cream layered with buttery brioche fingers. This peaches & cream brioche tiramisu is a refreshing and elegant dessert perfect for warm weather or special occasions.

Ingredients

Scale

Fruit and Syrup

  • 2 x 411g cans peach slices in syrup
  • 4 tbsp peach schnapps

Cream Mixture

  • 500ml double cream
  • 1 tsp vanilla extract
  • 2 tbsp icing sugar

Other

  • 8 Morrisons butter brioche rolls, cut in half, then each half cut into 4 fingers
  • 1 lime, zested
  • 2 tbsp flaked almonds, toasted

Instructions

  1. Prepare the syrup: Drain the peach slices over a bowl to collect the syrup. Stir the peach schnapps into the syrup to create a flavorful boozy liquid.
  2. Whip the cream: In a large mixing bowl, whip the double cream with the vanilla extract and icing sugar until soft peaks form, providing a light and fluffy texture for the layers.
  3. Layer the dessert: Arrange half of the drained peach slices in a single layer at the bottom of a serving dish. Lightly brush the brioche fingers with the peach schnapps syrup—avoid dunking to prevent sogginess—and place them over the peaches in a single layer.
  4. Add cream and repeat: Spread half of the whipped cream over the brioche layer. Repeat the layering with the remaining peach slices, sour cream, and brioche fingers, finishing with a final layer of whipped cream on top.
  5. Chill: Refrigerate the tiramisu for at least 1 hour to allow the flavors to meld and the dessert to set properly. It can be kept chilled for up to 24 hours.
  6. Garnish and serve: Before serving, sprinkle the lime zest and toasted flaked almonds over the top for added freshness and crunch.

Notes

  • Be careful not to soak the brioche fingers; brushing them with syrup prevents them from becoming soggy while retaining flavor.
  • This dessert can be prepared up to 24 hours in advance, making it ideal for entertaining.
  • To toast almonds, spread them on a baking tray and bake at 180°C (350°F) for 5-7 minutes, watching closely to prevent burning.
  • If peach schnapps is unavailable, substitute with a peach-flavored liqueur or a splash of peach juice for a non-alcoholic version.
