- 4 tbsp peach schnapps

- 500ml double cream
- 1 tsp vanilla extract
- 2 tbsp icing sugar

- 8 Morrisons butter brioche rolls, cut in half, then each half cut into 4 fingers
- 1 lime, zested
- 2 tbsp flaked almonds, toasted
Instructions
- Prepare the syrup: Drain the peach slices over a bowl to collect the syrup. Stir the peach schnapps into the syrup to create a flavorful boozy liquid.
- Whip the cream: In a large mixing bowl, whip the double cream with the vanilla extract and icing sugar until soft peaks form, providing a light and fluffy texture for the layers.
- Layer the dessert: Arrange half of the drained peach slices in a single layer at the bottom of a serving dish. Lightly brush the brioche fingers with the peach schnapps syrup—avoid dunking to prevent sogginess—and place them over the peaches in a single layer.
- Add cream and repeat: Spread half of the whipped cream over the brioche layer. Repeat the layering with the remaining peach slices, sour cream, and brioche fingers, finishing with a final layer of whipped cream on top.
- Chill: Refrigerate the tiramisu for at least 1 hour to allow the flavors to meld and the dessert to set properly. It can be kept chilled for up to 24 hours.
- Garnish and serve: Before serving, sprinkle the lime zest and toasted flaked almonds over the top for added freshness and crunch.
