Peach Syrup:

  • 6 ripe peaches, pitted and roughly chopped
  • 1 cup granulated sugar
  • 1 cup water

Lemonade:

  • 1 ½ cups freshly squeezed lemon juice (from about 810 lemons)
  • 6 cups cold water
  • Ice cubes, for serving
  • Lemon slices and peach slices, for garnish (optional)
  • Fresh mint sprigs, for garnish (optional)

Instructions

  1. Combine peaches, sugar, and water in a saucepan: In a medium saucepan, combine the chopped peaches, 1 cup of granulated sugar, and 1 cup of water.
  2. Bring to a simmer: Place the saucepan over medium heat and bring the mixture to a gentle simmer.
  3. Cook until peaches are soft: Let the mixture simmer for about 10-15 minutes, or until the peaches are very soft and easily mashed with a spoon. Stir occasionally to prevent sticking and ensure the sugar dissolves completely.
  4. Mash the peaches: Once the peaches are soft, use a potato masher or the back of a spoon to thoroughly mash them.
  5. Strain the syrup: Place a fine-mesh sieve over a heatproof bowl. Pour the peach mixture into the sieve and let the syrup drain through. Use the back of a spoon to gently press on the solids to extract as much syrup as possible. Discard the solids.
  6. Cool the syrup: Let the peach syrup cool completely before using it in the lemonade. You can speed up the cooling process by placing the bowl in the refrigerator.
  7. Squeeze the lemons: Squeeze the lemons to get 1 ½ cups of fresh lemon juice. Be sure to remove any seeds!
  8. Combine peach syrup and lemon juice: In a large pitcher, combine the cooled peach syrup and the freshly squeezed lemon juice. Stir well to combine.
  9. Add water: Add 6 cups of cold water to the pitcher. Stir well to combine all the ingredients.
