Peach Syrup:
- 6 ripe peaches, pitted and roughly chopped
- 1 cup granulated sugar
- 1 cup water
Lemonade:
- 1 ½ cups freshly squeezed lemon juice (from about 8–10 lemons)
- 6 cups cold water
- Ice cubes, for serving
- Lemon slices and peach slices, for garnish (optional)
- Fresh mint sprigs, for garnish (optional)
Instructions
- Combine peaches, sugar, and water in a saucepan: In a medium saucepan, combine the chopped peaches, 1 cup of granulated sugar, and 1 cup of water.
- Bring to a simmer: Place the saucepan over medium heat and bring the mixture to a gentle simmer.
- Cook until peaches are soft: Let the mixture simmer for about 10-15 minutes, or until the peaches are very soft and easily mashed with a spoon. Stir occasionally to prevent sticking and ensure the sugar dissolves completely.
- Mash the peaches: Once the peaches are soft, use a potato masher or the back of a spoon to thoroughly mash them.
- Strain the syrup: Place a fine-mesh sieve over a heatproof bowl. Pour the peach mixture into the sieve and let the syrup drain through. Use the back of a spoon to gently press on the solids to extract as much syrup as possible. Discard the solids.
- Cool the syrup: Let the peach syrup cool completely before using it in the lemonade. You can speed up the cooling process by placing the bowl in the refrigerator.
- Squeeze the lemons: Squeeze the lemons to get 1 ½ cups of fresh lemon juice. Be sure to remove any seeds!
- Combine peach syrup and lemon juice: In a large pitcher, combine the cooled peach syrup and the freshly squeezed lemon juice. Stir well to combine.
- Add water: Add 6 cups of cold water to the pitcher. Stir well to combine all the ingredients.
- Taste and adjust: Taste the lemonade and adjust the sweetness and tartness as needed. If it’s too tart, add more sugar, a tablespoon at a time, until it reaches your desired sweetness. If it’s too sweet, add a little more lemon juice. You can also add more water if you prefer a less intense flavor.
- Chill the lemonade: Cover the pitcher and refrigerate the lemonade for at least 30 minutes to allow the flavors to meld together.
- Fill glasses with ice: Fill glasses with ice cubes.
- Pour the lemonade: Pour the chilled peach lemonade over the ice.
- Garnish (optional): Garnish with lemon slices, peach slices, and fresh mint sprigs, if desired.
- Serve immediately: Serve the peach lemonade immediately and enjoy!
