For the Chicken:
- 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
For the Pasta:
- 8 oz uncooked penne pasta
- 1/2 cup low-sodium chicken broth
- 1 cup honey BBQ sauce
- 1 tablespoon soy sauce (optional)
- Chopped parsley, crushed red pepper flakes, shredded cheddar or mozzarella cheese (for garnish)
Instructions
- Heat olive oil in a large non-stick skillet over medium-high heat.
- Pour in chicken broth and deglaze the pan by scraping up brown bits.
- Stir in honey BBQ sauce and soy sauce. Let simmer for 2–3 minutes.
- Add uncooked penne and enough water to barely cover pasta (about 1 to 1½ cups).
- Cover and simmer for 12–15 minutes, stirring occasionally, until pasta is tender.
- Return chicken to skillet. Stir and simmer for another 2–3 minutes to combine flavors.
- Taste and adjust seasoning. Add garnishes if desired.
Add chicken, season with salt, pepper, paprika, and garlic powder. Sear until golden brown and cooked through. Remove and set aside.
