For the Soup:
- 2 tbsp butter
- 1 large vidalia onion, thinly sliced into 1/4″ slices (2.5 – 3 cups sliced)
- 2 cloves garlic, minced
- 24 oz yukon gold potatoes, diced into 1″ cubes (4 heaping cups)
- 4 cups broth (chicken bone broth preferred)
- 1–2 cups water
- ¼ cup dry white wine (or additional broth)
- 1 tsp kosher salt
- 1 tsp ground pepper
- 1 sprig fresh rosemary (plus more for garnish)
- 1 sprig fresh thyme (plus more for garnish)
- 1 bay leaf
- 1 tbsp fresh lemon juice
- 4 tbsp extra virgin olive oil (for garnish, optional)
Instructions
- Heat a dutch oven: Heat butter and oil in a dutch oven over medium heat. Add onions, season with salt, and cook until caramelized.
- Saute onions: Stir occasionally until onions are golden brown.
- Add garlic: Saute garlic until fragrant.
- Deglaze: Use wine to deglaze the pot and cook until absorbed.
- Add potatoes and broth: Stir in potatoes, broth, salt, and pepper. Simmer until potatoes are cooked.
- Blend: Remove herb stems, blend the soup until smooth. Adjust seasoning.
- Serve: Ladle into bowls, drizzle with olive oil, and garnish with herbs.
