Ingredients

  • 1 meaty chicken carcass, plus any jellified roasting juices, skin and fat discarded

  • 1–2 red chillies, halved, deseeded and sliced
  • 1 tsp ground coriander
  • ½ tsp ground cumin
  • Small pack coriander, stems and leaves chopped and separated
  • 1 large garlic clove, finely grated
  • 250g pouch wholegrain basmati rice

Instructions

  1. Step 1: Break the chicken carcass into a large pan. Add the sliced onion, 1.5 litres of water, lemon juice, and bay leaves. Cover and simmer gently for 40 minutes.
  2. Step 2: Remove the pan from heat and let it cool slightly for easier handling.
  3. Step 3: Place a colander over a bowl. Scoop out the bones and strain the broth into the bowl. Strip off any remaining chicken meat and return it, along with any onion, to the broth.
  4. Step 4: Return the strained broth and any jellified roasting juices to the pan. Add the sliced chilli, ground coriander, ground cumin, coriander stems, lemon zest, and grated garlic. Heat gently until just bubbling, taking care not to overboil to preserve delicate flavors.
  5. Step 5: Meanwhile, cook the wholegrain basmati rice according to the package instructions. Once cooked, toss the rice with the chopped coriander leaves.
