These mincemeat flapjacks combine warming autumnal flavors with a classic chewy oat texture. Packed with buttery oats, golden syrup, rich treacle, a fruit and nut mix, and spiced mincemeat, they make a deliciously sticky and sweet snack or dessert bar perfect for the holiday season or any time you crave a comforting treat.

Wet Ingredients
- 175g unsalted butter, plus extra for the tin
- 100g golden syrup
- 1 tbsp treacle
Dry Ingredients
- 175g light brown soft sugar
- 250g porridge oats
- 100g fruit & nut mix, roughly chopped
- 350g mincemeat (vegetarian if needed)
Instructions
- Prepare the Tin: Butter a 20cm square baking tin thoroughly and line it with baking parchment to prevent sticking and ensure easy removal of the flapjacks.
- Melt the Wet Ingredients: In a large pan over medium-low heat, melt the unsalted butter, golden syrup, treacle, and light brown soft sugar together. Stir continuously until the mixture is smooth and fully combined without boiling.
- Combine the Mixture: Remove the pan from heat and stir in the porridge oats, roughly chopped fruit & nut mix, mincemeat, and a pinch of salt. Mix thoroughly ensuring all the oats and mix-ins are evenly coated.
- Press and Shape: Tip the combined flapjack mixture into the prepared tin. Use a silicone spatula to spread it evenly and press firmly to pack the mixture tightly into the tin for a uniform texture.
- Bake: Place the tin in a preheated oven at 180°C (160°C fan) or gas mark 4. Bake for 30 to 35 minutes or until the flapjacks turn a golden color on top.
- Cool: Remove the tin from the oven and allow the flapjacks to cool in the tin for 30 minutes so they firm up. Then transfer them onto a wire rack to cool completely before cutting.
- Serve and Store: Once fully cooled, cut into squares and serve. Store the flapjacks in an airtight container where they will keep fresh for up to five days.
