Description

These mincemeat flapjacks combine warming autumnal flavors with a classic chewy oat texture. Packed with buttery oats, golden syrup, rich treacle, a fruit and nut mix, and spiced mincemeat, they make a deliciously sticky and sweet snack or dessert bar perfect for the holiday season or any time you crave a comforting treat.

Wet Ingredients

  • 175g unsalted butter, plus extra for the tin
  • 100g golden syrup
  • 1 tbsp treacle

Dry Ingredients

  • 175g light brown soft sugar
  • 250g porridge oats
  • 100g fruit & nut mix, roughly chopped
  • 350g mincemeat (vegetarian if needed)

Instructions

  1. Prepare the Tin: Butter a 20cm square baking tin thoroughly and line it with baking parchment to prevent sticking and ensure easy removal of the flapjacks.
  2. Melt the Wet Ingredients: In a large pan over medium-low heat, melt the unsalted butter, golden syrup, treacle, and light brown soft sugar together. Stir continuously until the mixture is smooth and fully combined without boiling.
  3. Combine the Mixture: Remove the pan from heat and stir in the porridge oats, roughly chopped fruit & nut mix, mincemeat, and a pinch of salt. Mix thoroughly ensuring all the oats and mix-ins are evenly coated.
  4. Press and Shape: Tip the combined flapjack mixture into the prepared tin. Use a silicone spatula to spread it evenly and press firmly to pack the mixture tightly into the tin for a uniform texture.
  5. Bake: Place the tin in a preheated oven at 180°C (160°C fan) or gas mark 4. Bake for 30 to 35 minutes or until the flapjacks turn a golden color on top.
  6. Cool: Remove the tin from the oven and allow the flapjacks to cool in the tin for 30 minutes so they firm up. Then transfer them onto a wire rack to cool completely before cutting.
  7. Serve and Store: Once fully cooled, cut into squares and serve. Store the flapjacks in an airtight container where they will keep fresh for up to five days.

  • Ensure the flapjacks are pressed tightly before baking to avoid crumbly bars.
