- 8 ounces cream cheese, 1 block
- 1/2 cup confectioner’s sugar
Fluff Salad:
- 8 ounces whipped topping, thawed
- 1 lemon, juiced
- 1/4 teaspoon lemon extract, optional
- 3 cups mini marshmallows
- 18 ounces fresh blueberries
- Fresh lemon zest, optional, for garnish
- Sliced almonds, for topping, optional
Instructions
- Beat Cream Cheese and Sugar: In a large bowl, beat the cream cheese and powdered sugar with a hand mixer on medium-high speed until smooth.
- Fold in Whipped Topping and Lemon: Gently fold in the whipped topping, lemon juice, and lemon extract with a rubber spatula until combined.
- Add Blueberries and Marshmallows: Add the fresh blueberries and marshmallows and continue to fold it all together and coat in the cream mixture.
- Chill: Cover with plastic wrap and place in the refrigerator to chill for 30 minutes to 1 hour.
- Serve and Garnish: Right before serving, garnish with sliced almonds and fresh lemon zest if desired.
