Wet Ingredients

  • 7 tablespoons Unsalted Butter
  • 2 Eggs
  • 2 tablespoons Milk
  • 1 teaspoon Vanilla Extract

Dry Ingredients

  • 140 grams All-Purpose Flour
  • 1/2 cup Granulated Sugar
  • 1 tablespoon Baking Powder

Coloring

  • Red Food Coloring, to taste
  • Blue Food Coloring, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (180°C) to ensure it’s ready for baking your muffins.
  2. Melt Butter: Melt 7 tablespoons of unsalted butter and allow it to cool down to prevent cooking the eggs in the next step.
  3. Prepare Eggs: Crack 2 eggs into a measuring cup and add 1 teaspoon vanilla extract. Beat them lightly until combined.
  4. Add Butter to Eggs: Slowly pour the cooled melted butter into the egg mixture while stirring gently to combine.
  5. Mix Dry Ingredients: In the bowl of an electric mixer, combine 140 grams of all-purpose flour, 1/2 cup granulated sugar, and 1 tablespoon baking powder.
  6. Initial Mixing: Set mixer on low speed and stir the dry ingredients lightly to blend them.
  7. Add Wet Ingredients: Slowly pour the egg and butter mixture along with 2 tablespoons of milk into the dry ingredients.
  8. Mix Batter: Increase the mixer to medium speed and mix for several minutes. Occasionally scrape down the sides of the bowl to ensure everything is well incorporated.
  9. Divide Batter: Divide the batter evenly into three separate bowls.
  10. Color Batters: Add a few drops of red food coloring to one bowl and stir until fully combined. Add a few drops of blue food coloring to another bowl and stir well. Leave the third bowl plain as the white batter.
  11. Layer Muffins: In each muffin cup, add 1 tablespoon of blue batter first.
  12. Add White Batter: Spoon white batter on top of the blue batter in each cup, then use a toothpick to spread it evenly.
  13. Top with Red Batter: Add the red batter as the top layer in each muffin cup.
  14. Bake Muffins: Place the muffin pan in the preheated oven and bake at 350°F (180°C) for about 15 minutes, until the muffins are golden and a toothpick inserted comes out clean.
  15. Cool & Serve: Remove muffins from the oven and allow them to cool before serving for the best texture and flavor.

Notes

  • You can adjust the amount of food coloring to achieve your preferred shade of red and blue.
  • Be careful not to overmix the batter to keep your muffins light and fluffy.
  • If you don’t have an electric mixer, you can mix by hand but it may take a little longer to get a smooth batter.
  • These muffins are best enjoyed fresh but can be stored in an airtight container for 2-3 days.
  • Use toothpicks carefully to create distinct layers without blending the colors together too much.
