- 1 large tomato, sliced

- Ketchup and mayo, to serve

Instructions
- Step 1: In a large bowl, combine the beef mince with the all-purpose seasoning. Season with salt and pepper, then mix well using your hands.
- Step 2: Shape the mixture into 4 large, very flat patties and 4 slightly smaller patties.
- Step 3: Place a larger patty on a plate and add some chopped cheese and pickle in the center. Place a smaller patty directly on top.
- Step 4: Fold the edges of the larger patty up and over the smaller one, sealing the cheese and pickle inside. Press the edges firmly to ensure the burgers are sealed well. Repeat to make 4 stuffed burgers total.
- Step 5: Heat a large frying pan over medium heat. Toast the cut sides of the brioche buns for 2-3 minutes until golden, then set aside.
- Step 6: Pour half the vegetable oil into the pan. When shimmering, fry two patties at a time for 3-4 minutes per side, pressing gently to form a crust. The burgers should be cooked to medium with melted cheese inside.
